Easter has always been one of my favorite holidays. Growing up it meant a big family brunch, a ham dinner with all the trimmings, and my mom’s Easter basket on the table with those foil-wrapped eggs I’d steal before anyone noticed. These days I still go all-in on the food, but I’ve learned over the years that the best Easter table doesn’t have to derail a week’s worth of good intentions.
This collection pulls together my favorite WW friendly Easter recipes from the SNL archives — ideas for brunch, dinner, and dessert that taste like celebrations without requiring you to throw your points out the window. Easter falls on April 5 this year, so if you’re still working on your menu, here are some ideas.
(And yes, I do allow myself a handful of Cadbury Mini Eggs. Some things are non-negotiable.)

Easter Brunch Ideas
Spring brunch is one of the great pleasures of the season — eggs in every form, fresh fruit, something sweet alongside something savory. Here are some of my favorites from the SNL kitchen.

Eggs and Savory
- WW Deviled Eggs — the essential Easter appetizer and brunch staple, made lighter
- Scrambled Eggs with Smoked Salmon — elegant, easy, and the combination of flavors is just right for a spring morning
- Ina Garten’s Egg Salad Tartines — open-faced egg salad on toast, the kind of thing that looks fancy with almost no effort
- Spinach Quiche — a classic that feeds a crowd and holds well on a buffet table
- Microwave Mug Cottage Cheese Scrambled Eggs — if you’re hosting a small Easter and just need something quick and satisfying
- Slow Cooker Breakfast Casserole — assemble it the night before, wake up to breakfast already made

Something Sweet
- Strawberry Streusel Muffins — a spring classic; fresh strawberries and a crumbly topping
- Cottage Cheese Power Pancakes — high protein, surprisingly fluffy, and nobody guesses the secret ingredient
- Easy Kodiak Cakes Muffins — mix-and-bake muffins with more protein than they have any right to
- Skinny Baked French Toast with Strawberry Topping — bakes in the oven while you get the table set
- Skinny Kiwifruit Muffins — bright and a little unexpected; perfect for spring

Fresh Fruit
- Citrus & Pomegranate Fruit Salad with Toasted Coconut — the kind of fruit salad that earns compliments; beautiful on an Easter table
Easter Dinner Ideas

The Main Event
- Slow Cooker Spiral Cut Ham — honey mustard orange glaze, done in the slow cooker so the oven is free for everything else
- Slow Cooker Boneless Leg of Lamb with Mint Glaze — lamb is the traditional Easter centerpiece and this slow cooker version is beautifully tender
- Miso Glazed Pork Tenderloin — if you want something a little different and quick to make

Potatoes
- Slow Cooker Mashed Potatoes with Spinach & Dill — creamy, green-flecked, and frees up stovetop space
- Creamy Low Calorie Mashed Potatoes — the reliable classic, lightened up
- WW Friendly Red Potato Salad — a great make-ahead for Easter buffets
- Rosemary Roasted Potatoes — simple, crispy, always goes fast

Vegetables and Salads
- Parmesan Roasted Asparagus — asparagus is at its peak in spring; this is one of the best ways to serve it
- Broccoli Salad — a crowd-pleaser that can be made ahead and holds well
- Carrot Salad with Raisins & Walnuts — bright and a little sweet; carrots feel right at Easter
- Orzo Salad with Vegetables — a hearty spring salad that works as a side or a light main
- Simple Summer Corn Tomato Salad — fresh and colorful; a nice contrast to the richer dishes on the table
Easter Dessert Ideas

- Chocolate Rice Krispie Easter Egg Nests — the quintessential Easter treat; three ingredients and kids love making them
- Easy Easter Cookies 3 Ways — decorated sugar cookies using Betty Crocker Sugar Cookie Mix (affiliate link); easy enough to make with kids
