Inspired by a recipe from Hit the Spot by WeightWatchers, it uses just five simple ingredients and comes together with very little hands-on time. Part of the blueberries are gently cooked to create a glossy filling, while the rest are stirred in at the end so they stay whole and juicy.

How to Make Summertime Fresh Blueberry Pie

Step 1: Gather and prepare all ingredients.

Step 2: In a large saucepan, whisk together the cornstarch and water until smooth. Add 3 cups of the blueberries (about half) and the sugar to the pan. Bring to a boil over medium-high heat, stirring frequently and pressing the blueberries against the sides and bottom of the saucepan with a wooden spoon (affiliate link), crushing them. Continue cooking while constantly stirring until the mixture thickens and boils, about 1 minute.

Step 3: Turn off the heat and stir in the remaining blueberries.

Step 4: Pour the filling into the prepared graham cracker crust and chill in the refrigerator until set, about 5 hours or overnight.

Step 5: Cut into 8 wedges and serve.
