  • Ziti (or other tube pasta)
  • Olive oil
  • Minced garlic
  • Baby spinach
  • Canned small white beans
  • Cherry tomatoes
  • Reduced-sodium chicken broth
  • Salt and black pepper

How to Make Ziti with Tomatoes, White Beans and Spinach

Step 1: Gather and prepare all ingredients.

Step 2: Cook the pasta according to the package directions, leaving out the salt. Drain and keep warm.

Step 3: Meanwhile, heat the olive oil over medium heat in a large nonstick skillet (affiliate link). Add the garlic and cook, stirring until golden, about 1 minute. Add the spinach and continue stirring until the spinach is wilted, about 2 minutes.

Step 4: Add the white beans, grape tomatoes, broth, salt and pepper and bring to a simmer over medium-high heat. Cook until the broth is slightly thickened, about 3 minutes.

Step 5: Add the pasta and gently stir until heated through, about 1 minute. Enjoy with a sprinkle of shredded Parmesan cheese and crushed red pepper flakes, if desired.

Recipe Notes

Bulk up this pasta dish with more zero point veggies. Try adding about 2 cups of sliced cremini or baby Bella mushrooms to the skillet along with the spinach in Step 3.

I also like to add a sprinkle of crushed red pepper flakes to my pasta.
