1can(15.5 ounces) small white beans, rinsed and drained
1cupgrape tomatoes
1cupreduced-sodium chicken broth, or water
1/4teaspoonsalt
1/4teaspoonblack pepper
1/4cupgrated Parmesan cheese
Instructions
Cook the pasta according to the package directions, leaving out the salt. Drain and keep warm.
Meanwhile, heat the olive oil over medium heat in a large nonstick skillet. Add the garlic and cook, stirring until golden, about 1 minute. Add the spinach and continue stirring until the spinach is wilted, about 2 minutes.
Add the white beans, grape tomatoes, broth, salt and pepper and bring to a simmer over medium-high heat. Cook until the broth is slightly thickened, about 3 minutes.
Add the pasta and gently stir until heated through, about 1 minute. Enjoy with a sprinkle of shredded Parmesan cheese and crushed red pepper flakes, if desired.
