  • Egg – One large egg works perfectly. Use two if you want a larger serving.
  • Cottage cheese – I use one tablespoon per egg. Any fat level works, but low-fat or fat-free keeps Points lower while adding protein and creaminess.
  • Salt and pepper – A small pinch is enough.
  • Optional add-ins – Chopped spinach, diced bell pepper, sliced scallions, shredded cheese, paprika, dried herbs, or a splash of hot sauce are all delicious.

Step 1: Prep your mug

Lightly spray a microwave (affiliate link)-safe mug with nonstick cooking spray.
