When I want something warm, sweet, and satisfying without a lot of fuss, this Microwave (affiliate link) Cottage Cheese Raspberry Blintz is one of my favorite quick treats. I love traditional blintzes, but they take time and usually make a big batch. This simple mug version gives me all the flavor and comfort of a classic blintz in just a few minutes.

Traditional blintzes are thin crepe-like pancakes filled with lightly sweetened cheese and often topped with fruit. This single-serving version combines the creamy filling and the pancake batter right in the mug, cooks in the microwave (affiliate link), and finishes with a spoonful of raspberry jam. It is warm, comforting, protein packed, and so easy.

It makes a great WW friendly dessert, snack, or even a quick breakfast when I want something sweet but still light.

Why I Love This Easy Mug Blintz Recipe

Ready in minutes. Everything mixes in the mug and cooks quickly in the microwave.

Ingredients and Substitutions

  • All-purpose flour – Gives the blintz structure. Gluten-free all-purpose flour, oat flour (affiliate link), or almond flour are good substitutes.
  • Truvia Baking Blend (affiliate link) – Sweetens the batter with fewer calories. Any low-calorie sweetener or a small amount of will work.
  • Salt – A pinch helps to balance the sweetness.
  • Low-fat cottage cheese – Adds creaminess and protein. Light ricotta is an easy substitute.
  • Plain nonfat Greek yogurt – Helps create the classic blintz texture. Low-fat or whole milk yogurt also works.
  • Beaten egg – Use 2 tablespoons beaten egg and save the rest for another blintz or another recipe or substitute one small egg.
  • Vanilla extract – Adds sweet flavor.
  • Reduced sugar raspberry jam – My topping of choice for the finished blintz. Strawberry, apricot, blueberry, or any low-sugar jam also work.
  • Powdered sugar (optional) – A light dusting adds a pretty finish.

How to Make Cottage Cheese Blintz Mug, Step-by-Step

Step 1: Gather and prepare all ingredients.

Step 2: Add the flour, Truvia (affiliate link), salt, cottage cheese, yogurt, egg and vanilla to the mug. Mix with a fork until thoroughly combined.

Step 3: Place mug in microwave and heat on High power for 75 seconds. Check for doneness. Blintz is ready when slightly puffed and set in the center. If blintz isn’t ready, continue to cook on High in 30 seconds increments until done. (Cooking times will vary based on strength of microwave used.)

Step 4: When done, remove mug from microwave and allow to sit for 5 minutes.

Step 5: Top with raspberry jam and enjoy right from the mug.

Step 6: Lightly dust with powdered sugar, if desired.

Recipe Notes, Variations and Substitutions

  • To measure the egg, whisk one large egg in small dish. Measure 2 tablespoons and add to the mug. Store the remaining egg in an airtight container in the refrigerator. Alternatively, use one small egg in place of the measured 2 tablespoons.
  • If you don’t have or don’t like cottage cheese, try substituting the same amount of light ricotta cheese.
  • Use your favorite low-sugar jelly, jam, preserves or marmalade in place of the raspberry.
  • Make this ahead: Add the flour, sweetener and salt to the mug and cover. (It’s ok to leave the covered mug at room temperature.) Add the cottage cheese, yogurt, egg and vanilla to a small airtight container and refrigerate until ready.
  • Make this gluten-free by substituting the all-purpose flour with your favorite gluten-free flour (all-purpose, almond, oat, etc.)

Serving Suggestions

  • Enjoy as a light dessert, afternoon treat, or sweet breakfast for one.
  • Add fresh berries or a dollop of yogurt for extra creaminess.
  • For a larger family, you can mix the mug ingredients ahead and once cooked, everyone can top a blintz with their favorite fruit spread flavor.
