WW Recipe of the Day: Microwave Raspberry Blintz
If you've ever enjoyed a blintz, you are in for a treat with this scaled back simplified version. I found it to be fun to make and eat!
According to Wikipedia, the blintz is a traditional pancake that's usually filled with cheese, or fruit, and rolled into the shape of a cigar. They are of Ashkenazi Jewish origin and enjoyed during many Jewish holidays.
A blintz is very similar to a crepe—with both being very thin pancakes. But the blintz is always filled and rolled whereas crepes can be served filled or with a side of fillings. You'll find both sweet and savory crepe fillings, while blintzes are usually filled with a sweetened cheese and maybe be accompanied with a fruit compote or jam.
This easy protein-packed version combines the cheesy filling and pancake and tops it all off with a little jam. And the best part, it's mixed in a mug, cooked in a microwave and serves one.

How to Make Raspberry Blintz Mug
Step 1: Gather and prepare all ingredients.

Step 2: Add the flour, Truvia (affiliate link), salt, cottage cheese, yogurt, egg and vanilla to the mug. Mix with a fork until thoroughly combined.

Step 3: Place mug in microwave and heat on High power for 75 seconds. Check for doneness. Blintz is ready when slightly puffed and set in the center. If blintz isn't ready, continue to cook on High in 30 seconds increments until done. (Cooking times will vary based on strength of microwave used.)
Step 4: When done, remove mug from microwave (affiliate link) and allow to sit for 5 minutes.

Step 5: Top with raspberry jam and enjoy right from the mug.

Recipe Notes, Variations and Substitutions
- To measure the egg, whisk one large egg in small dish. Measure 2 tablespoons and add to the mug. Store the remaining egg in an airtight container in the refrigerator. Alternatively, use one small egg in place of the measured 2 tablespoons.
- If you don't have or don't like cottage cheese, try substituting the same amount of light ricotta cheese.
- Use your favorite low-sugar jelly, jam, preserves or marmalade in place of the raspberry.
- Make this ahead: Add the flour, sweetener and salt to the mug and cover. (It's ok to leave the covered mug at room temperature.) Add the cottage cheese, yogurt, egg and vanilla to a small airtight container and refrigerate until ready.
- Make this gluten-free by substituting the all-purpose flour with your favorite gluten-free flour (all-purpose, almond, oat, etc.)

For a larger family, you can mix the mug ingredients ahead and once cooked, everyone can top a blintz with their favorite fruit spread flavor.
