Kohlrabi in Land O Lakes Community Garden

Thanks to my sister and our foray into community gardening, we discovered kohlrabi, part bulb, part greens, it’s like a cross between a radish, jicama, broccoli, and collard greens.

It can be eaten raw or cooked. We tried it roasted, sautéed and shredded for slaw. It’s also great as part of a veggie tray with your favorite skinny dip.

Easy Vegetarian Stuffed Mushrooms – These mushrooms can be used as an appetizer of course, or as a side dish for grilled meats and fish. I’ve made them several times now and enjoy them on their own and as a side dish.

Meal Planning: On My Menu Next Week

After years of trial and error, I discovered that mapping out a rough outline of meals for the coming week is one of the most important things I can do for an easier, less stressful, more successful week.

Meal Planning makes staying on track with my healthy eating/weight management goals so MUCH EASIER. Once I have a plan I shop and do a meal prep on the weekend saving time and money all week long.

New Discoveries & WW Friendly Food Finds

Al Dente Carba Nada Pasta – Fettuccini

Have you heard of Al Dente Carba-Nada Pasta (affiliate link)? I hadn’t until the company reached out offering a free sample! Definitely one of the perks of having a food blog!

I’ve made it twice now. I used the roasted garlic fettuccine tossed with a little olive oil and garlic as a simple side dish with slow cooker chicken cacciatore and the egg fettuccine in this easy tuna casserole.

I was pleasantly surprised by how much it tasted like “regular” pasta. Both the taste and texture were excellent. Each generous serving has just 3 SmartPoints!

There are also several Al Dente Plant-Based Pastas – Chickpea Turmeric, Red Lentil Sweet Potato, Green Pea Wild Garlic—that are higher in protein and gluten-free. I haven’t had a chance to sample them yet.
