On My Menu This Week

I have been indulging more than usual this summer. While the cheese curds, soft serve ice cream cones and other treats have been delicious, I’m feeling ready to lighten things up. For me that means focusing on slimming soups, salads, grilled chicken and vegetables for a while. Served up in various combinations, they make for light yet satisfying meals.

Lovers of Mexican food will want to try Slow Cooker Mexican Pork Carnitas that can be used to create all kinds of delicious dishes. (Or try this variation for confit/carnitas using turkey legs instead)

In this video WW Ambassador Felicia Keathley shares her recipe for Tater Tot Casserole, easy family friendly comfort food:

Felicia’s Tater tot Casserole Recipe

  • 1 pound 96/4 extra lean ground beef
  • 1 onion chopped
  • 1 can cream of mushroom soup
  • 1.5 cups Fat Free Kraft Cheddar
  • 30 Oreida tater tots
  • 2 cups mixed vegetables (thawed/cooked)

Cook beef and onions until beef is fully browned. Add cream of mushroom soup and mixed veggies. Pour mixture into 9×13 baking dish. Top with cheese. Top with tater tots. Bake at 350F for 40 minutes.

  • 1/6th of the dish is 6 Freestyle SP (5SP with Fat-Free Ground Turkey)
  • 1/4th of the dish is 10 Freestyle SP (7SP with Fat-Free Ground Turkey)
