I have been indulging more than usual this summer. While the cheese curds, soft serve ice cream cones and other treats have been delicious, I'm feeling ready to lighten things up. For me that means focusing on slimming soups, salads, grilled chicken and vegetables for a while. Served up in various combinations, they make for light yet satisfying meals.

Felicia's Tater tot Casserole Recipe

- 1 pound 96/4 extra lean ground beef
- 1 onion chopped
- 1 can cream of mushroom soup
- 1.5 cups Fat Free Kraft Cheddar
- 30 Oreida tater tots
- 2 cups mixed vegetables (thawed/cooked)
Cook beef and onions until beef is fully browned. Add cream of mushroom soup and mixed veggies. Pour mixture into 9x13 baking dish. Top with cheese. Top with tater tots. Bake at 350F for 40 minutes.
- ⅙th of the dish is *6 Freestyle SP (*5SP with Fat-Free Ground Turkey)
- ¼th of the dish is *10 Freestyle SP (*7SP with Fat-Free Ground Turkey)
