Weight Watchers Recipe of the Day: Skinny Healthy Pumpkin Dessert Recipes
I’m a huge pumpkin fanatic and have yet to meet a pumpkin dessert I didn’t like.
For me, Thanksgiving wouldn’t be complete without a pumpkin dessert or two.
But these days, I’m on the lookout for desserts that won’t bust the calorie bank. Saving a few calories here and there can really add up at the end a day or week or month. And losing weight and keeping it off really can be that simple.
Everyone knows this time of year can be challenging. The thermometer is dropping and you naturally long for warm and satisfying comfort food.
Plus, the days are short. And the weather is cool.
The season of never ending string of Christmas and New Years parties all tax your willpower and endanger your waistline.
Thankfully Eat Stop Eat actually gives you the freedom to indulge in those joyful treats while still losing weight and experiencing growing energy and health.
I’ve scanned the web and all my favorite light cooking recipe sites to assemble a great collection of low-fat healthy pumpkin dessert recipes: pumpkin custards, low-fat pumpkin flan, low-fat pumpkin bread pudding, pumpkin pie dip, pumpkin milkshakes, pumpkin nog, lighter pumpkin trifle, pumpkin rice pudding and a lighter version of pumpkin dump cake -a pumpkin dessert recipe with yellow cake mix, and then calculated their Weight Watchers PointsPlus values for them.
I’ve also included my favorite recipe for Easy Creamy Pumpkin Mousse that is incredibly simple and delicious. Enjoy!
- 1 (4 serving size) package fat-free sugar-free instant butterscotch pudding mix
- ¾ cup low-fat milk
- 1 can (15 ounces) pumpkin puree
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ⅛ teaspoon ground cloves
- 3 cups light whipped topping, thawed
- In a large bowl, whisk the pudding mix and milk until slightly thickened.
- Add the pumpkin, cinnamon, ginger and clove and whisk until well blended.
- Gently fold in the whipped topping, one third at a time.
- Pour ½ cup of the mousse into each of 8 serving dishes. Chill for at least 30 minutes before serving.
