Today's post was inspired by a comment left by one of our reader's Kate, who shared a bunch of ideas for how she preps her kitchen for a successful week, including this nugget, " ...Costco roasted chickens --- these little babies are worth their weight in GOLD! I buy two every Sunday, and break them down into 3 ounce portions. I use the meat in chicken salads and recipes, and the rest gets turned into stock, which I de-fat and use to make soups."

She got me thinking about all the easy delicious things you can do with rotisserie chicken. So, last Sunday after yoga, I stopped by Costco and grabbed me one to play with this week.
Sunday we had roasted chicken, mashed potatoes and a mixed green salad.
On Monday, I made a delicious chicken and wild rice salad and served it on a bed of greens and sliced strawberries.
Last night it was a quick and easy chicken pot pie.
With cooked chicken in the fridge, getting dinner pulled together seemed a whole lot easier this week. There are so many ways you can use rotisserie chicken.

Simple and delicious, this chicken and wild rice salad is a new favorite at our house. The only thing that has to be cooked is the wild rice blend. (I like either Uncle Ben's or Far East brands.)

My favorite is Poppy Seed Chicken, but not at all WW friendly, maybe you could help me figure out a way to lighten it up.
Tear Chicken into pieces, lay into a dish
mix together 1 can of cream soup and 1 cup of sour cream, frost the chicken
crush one sleeve of butter crackers mix with 1 stick of butter...stop the maddness!
and 2 Tsp. of poppy seeds sprinkle over the cream mixture and bake @ 30 min.
Serve with fresh green beans, Please help, love these flavors together. Thanks

Hi Lynne, Your poppy seed chicken sounds yummy! I would substitute light sour cream or nonfat plain greek yogurt for the sour cream. Then I would just use half a sleeve of the crushed crackers and skip the butter. You'll still get all the flavors but save a ton of fat and calories! Hope this helps.

I like rotisserie chicken just like it is. Serving it with potato salad, tomatoes out of the garden and cucumbers from the garden sliced with apple cider vinegar.
I would use the leftovers in a tossed salad.

We love rotisserie chicken the first night just as it is, nice and hot with a side salad and cranberry sauce and asparagus. Then the second night I usually make a chicken salad with crassions, a little curry and grape and sometimes apples and celery. The combination is delicious and refreshing.

I love making a lunch with leftover Rotisserie chicken. I take a 16 oz. bag of frozen stir-fry vegetables and stir fry them in a pan, then add chopped chicken breast to heat. After it's all warm I add a tablespoon of a purchased stir-fry sauce. Sometimes I add Sriracha sauce for a bit of heat. I also serve it over rice sometimes.

Just a question.....The above recipe for chicken and wild rice salad has 20 grams of fat per serving. I don't follow Weight Watchers (just watch what I eat and eat healthier), but do they really allow all that fat on their diet?

Love to use a rotisserie chicken in chicken salad , pulled BBQ chicken sandwiches and anything Mexican that calls for shredded chicken. The bones are a great addition to my homemade stock.

I like to use the chicken as is with green beans and mashed potatoes the first night and then I use the carcass to make stock used in my Chicken Mushroom & Wild Rice Soup. Some yummy ideas here, also and I will try some of your delicious Chicken Salad varieties soon!
