Today's post was inspired by a comment left by one of our reader's Kate, who shared a bunch of ideas for how she preps her kitchen for a successful week, including this nugget, " ...Costco roasted chickens --- these little babies are worth their weight in GOLD! I buy two every Sunday, and break them down into 3 ounce portions. I use the meat in chicken salads and recipes, and the rest gets turned into stock, which I de-fat and use to make soups."

She got me thinking about all the easy delicious things you can do with rotisserie chicken. So, last Sunday after yoga, I stopped by Costco and grabbed me one to play with this week.
Sunday we had roasted chicken, mashed potatoes and a mixed green salad.
On Monday, I made a delicious chicken and wild rice salad and served it on a bed of greens and sliced strawberries.
Last night it was a quick and easy chicken pot pie.
With cooked chicken in the fridge, getting dinner pulled together seemed a whole lot easier this week. There are so many ways you can use rotisserie chicken.

Simple and delicious, this chicken and wild rice salad is a new favorite at our house. The only thing that has to be cooked is the wild rice blend. (I like either Uncle Ben's or Far East brands.)

Nothing better than a rotisserie chicken in my house. First we eat the breast meat (me in my salads and my husband and son for sandwiches). Then I pull off the rest of the meat and make chicken enchiladas with the rest of the meat. Then I throw the bones into a pot of water with celery, carrots, onions and spices and I eat chicken soup with zoodles for several days after. So, my $5 rotisserie chicken ends up feeding many, many days.

I love rotisserie chicken many ways. It makes a quick dinner any way you use it. I do love to make barbecue chicken sliders or a chicken salad with grapes and cashews. Or just eat it as soon as we get home with a tossed salad!

I'm a Texan and we're big on King Ranch casseroles. Shredded chicken breast, tortillas, rotel tomatoes, cheddar. Great use for left over rotisserie chicken breast (the legs I just eat right up as is).

My favorite way to use rotisserie chicken is in a Chicken Cranberry Salad: Shred the chicken, add it to spring mix lettuce with a handful of dried cranberries and slivered almonds. Toss with blue cheese and add poppyseed dressing.
