If you are a Weight Watcher there’s a good chance you eat a lot of chicken and your fair share of salad.
During the long hot summer here in Phoenix, chicken salad is one of my go-to meal options for both lunch and dinner.
So, to keep from getting bored, I’m always trying out new Weight Watchers chicken salad recipes.
Here are 9 of my favorites, all with calories and Points Plus.
Favorite Weight Watchers Chicken Salad Recipes
Chicken Salad with Apples and Cranberries – Leftover rotisserie chicken, apples, celery, and dried cranberries in a light creamy Greek yogurt based dressing combine to create this light and delicious chicken salad with apples and cranberries.
Skinny Curried Chicken Salad Diced chicken, celery, scallions, apple, and raisins with a lightened-up curry mango chutney yogurt-mayonnaise dressing. Even the non curry fans loved this.
Chicken Avocado Salad – This chicken avocado salad is another easy, healthy and delicious recipe, perfect for using up leftover cooked chicken. I love its light flavorful soy based dressing.
Barefoot Contessa Mustard Chicken Salad Makeover – Ina Garten’s Mustard Chicken Salad made lighter. As soon as I spotted this mustard chicken salad with broccoli and tomatoes in Ina’s latest cookbook I knew I wanted to try it. I’m so glad I did. It was easy to lighten up by using a combination of light mayo and plain non fat Greek yogurt. Flavorful, creamy, crunchy and colorful it’s a winner in my book.
Grilled Chicken Greek Salad – Greek salad with grilled chicken is one of my favorite lunch options. It’s loaded with good-for-you ingredients: crunchy romaine lettuce, cucumbers, red onion, tomatoes, olives, feta cheese and if you are really lucky – a pickled pepperoncini or two.
Mixed Greens with Strawberries, Avocado and Chicken – Chicken salad with strawberries and mixed greens crumbled goat cheese, chopped avocado and sliced almonds, in a simple honey & citrus vinaigrette dressing.
Weight Watchers Chicken Salad with Chutney and Curry – Here’s a healthy and delicious chicken salad with chutney and curry and fresh mango.
Chicken and Quinoa Salad with Dried Fruit – A light and tasty twist on chicken salad – grilled chicken, quinoa, green peas, apricots, and raisins tossed with orange juice, rice wine vinegar, and olive oil and sprinkled with toasted pine nuts.
Satay Chicken Pasta Salad – This Satay Chicken Pasta Salad is one of best healthier pasta salad recipes I’ve ever come across. It’s a delicious and colorful main-dish salad that gets its distinct flavor from a simple dressing inspired by Thai peanut sauce.
Mediterranean Chicken Couscous Salad – Simple. Healthy. Delicious. A complete light meal in a bowl. This Mediterranean couscous salad with chicken is a winner. And it tastes even better the next day after the flavors have had a chance to meld. So you can enjoy it for dinner and then again the next day for lunch.
