WW Recipe of the Day: Easy Barbecue Ranch Chicken Salad

Today I’m sharing a recipe for BBQ Ranch Chicken Salad that is as light and healthy as it is delicious. Crispy lettuce topped with chopped chicken breast, tomatoes, corn, black beans, tomatoes and drizzled with BBQ sauce and light ranch dressing, this salad is as good tasting as it is good for you.

BBQ Ranch Chicken Salad from Meal Planning Mommies

This healthy, flavorful salad comes together quickly and is guaranteed to be a hit with your entire family. It is a lot cheaper and lower in calories than the kind served up in your favorite restaurant – like Wendy’s or Cheesecake factory – too!

As soon as I saw it in MPM 12 Week Meal Planning Bundle (affiliate link), an incredible resource filled with family friendly Weight Watchers meal plans, recipes and grocery lists, I knew I wanted to try it.

According to my calculations each serving has 320 calories.

If you are following the WW Program, most of the ingredients in this yummy salad—lettuce, tomatoes, scallion, chicken breast, black beans and corn—all have zero Points.

Recipe Notes

This recipe is a great way to use up leftover grilled chicken or rotisserie chicken. While it is delicious all year long, I especially enjoy making it in summer when corn and tomatoes are at their peak of flavor.

Though the original recipe is written for four servings, I changed it up for one.

To keep the calories low and Weight Watchers salad I opt for reduced fat cheese and light yogurt based dressing like the one from Bolthouse Farms. (You’ll find it your grocery store’s refrigerated section.) Or, you can always make your own homemade, WW-Friendly Ranch Dressing.

Of course you should feel free to change up the ingredients to suit your tastes and what you have on hand. Here are some ideas…

Recipe Additions and Variations

Possible Additions:
Chopped avocado, chopped fresh cilantro, chopped cucumber, etc.

Spicier:
Chopped fresh or pickled jalapeno peppers.

Vegetarian:
Omit the chicken and add more beans.

WW Simply Filling:
Use fat-free cheese and ranch dressing and sugar free barbecue sauce (affiliate link)

BBQ Ranch Chicken Salad Recipe

Ingredients 

  • 2 cups chopped lettuce (romaine, iceberg, green leaf, etc)
  • 1/2 cup chopped or sliced cooked chicken breast
  • 1 small tomato, chopped
  • 2 tablespoons sliced scallions
  • 1/4 cup black beans
  • 1/3 cup corn kernels
  • 2 tablespoons shredded reduced-fat sharp cheddar cheese
  • 1 tablespoons light ranch dressing (such as Bolthouse Farms)
  • 1 tablespoon BBQ sauce

Instructions 

  • Place lettuce in a plate or in a bowl. 
  • Top with the chicken, scallions, tomato, black beans and corn. Sprinkle with cheese. 
  • Drizzle with BBQ sauce and dressing.

    I warmed my beans, corn and chicken in the pan with myfave bbq sauce. this got thflavor on everything so i didnt need the ranch. delicious

    Bolthouse now has a Honey Barbeque Ranch Dressing-you could omit the regular Ranch and BBQ sauce and use 2 TBSP of this instead (2pts)
