BBQ Ranch Chicken Salad Recipe Notes
This recipe is a great way to use up leftover grilled chicken or rotisserie chicken. While it is delicious all year long, I especially enjoy making it in summer when corn and tomatoes are at their peak of flavor.
Though the original recipe is written for four servings, I changed it up for one.
To keep the calories low and Weight Watchers salad I opt for reduced fat cheese and light yogurt based dressing like the one from Bolthouse Farms. (You’ll find it your grocery store’s refrigerated section.)
Of course you should feel free to change up the ingredients to suit your tastes and what you have on hand. Here are some ideas…
Recipe Additions & Variations
Possible Additions: chopped avocado, chopped fresh cilantro, chopped cucumber
Spicier: chopped fresh or pickled jalapeno peppers
Vegetarian: omit the chicken and add more beans
WW Simply Filling: use fat free cheese and ranch dressing and sugar free barbecue sauce
