Today’s post was inspired by a comment left by one of our reader’s Kate, who shared a bunch of ideas for how she preps her kitchen for a successful week, including this nugget, ” …Costco roasted chickens — these little babies are worth their weight in GOLD! I buy two every Sunday, and break them down into 3 ounce portions. I use the meat in chicken salads and recipes, and the rest gets turned into stock, which I de-fat and use to make soups.”
Brilliant, yes?
She got me thinking about all the easy delicious things you can do with rotisserie chicken.
So, last Sunday after yoga, I stopped by Costco and grabbed me one to play with this week.
Sunday we had roasted chicken, mashed potatoes and a mixed green salad.
On Monday, I made a delicious chicken and wild rice salad (recipe below) and served it on a bed of greens and sliced strawberries.
Last night it was a quick and easy chicken pot pie.
With cooked chicken in the fridge, getting dinner pulled together seemed a whole lot easier this week. There are so many ways you can use rotisserie chicken.

Rotisserie Chicken & Wild Rice Salad
Simple and delicious, this chicken and wild rice salad is a new favorite at our house. The only thing that has to be cooked is the wild rice blend. (I like either Uncle Ben’s or Far East brands.)
I used half light mayonnaise and half plain non-fat Greek yogurt, but all of one or the other would be fine. This yummy chicken and wild rice salad can be amended a multitude of ways to suit your tastes.

Chicken Salad with Apples and Cranberries
Chicken Fried Rice (just substitute chicken for the ham)
Chicken and Biscuit Pot Pie or make a cheater’s version using canned cream of chicken soup like I do when I’m feeling lazy.
Chicken & Veggies with Pasta
Toss together your cooked chicken with assorted chopped cooked (roasted, grilled, steamed) vegetables and your favorite pesto or pasta sauce. I like roasted cherry tomatoes, chopped artichoke hearts and pesto thinned with some of the pasta cooking water.
Asian Chicken Lettuce Wraps
Toss shredded chicken with shredded carrots, cabbage and your favorite light Asian dressing or Hoisin sauce. Wrap in large lettuce leaves.
Italian Chicken Salad Sandwich
Toss chopped or shredded chicken with chopped roasted red peppers, reduced-fat pesto sauce and nonfat plain Greek yogurt. Serve on light bread, a sandwich thin or in a wrap with lettuce and tomatoes.
Cheesy Chicken Nachos
Top baked low-fat tortilla chips with shredded chicken breast, salsa, chopped scallions and shredded reduced-fat Mexican cheese. Bake until heated through and cheese melts.
Quick & Easy Chicken Teriyaki Skillet
Combine sliced chicken breast and steamed frozen mixed Asian vegetables in nonstick skillet. Add 2 tablespoons teriyaki sauce and heat; spoon over cooked brown rice or cauliflower rice.
BBQ Chicken Tortilla Pizza
Top a small tortilla with BBQ sauce, chopped chicken, shredded reduced fat cheese and chopped veggies such as broccoli, red bell pepper, mushrooms. Bake until heated through and cheese melts.
Chicken Burrito Bowl
Combine in a bowl chopped chicken, black beans, rice, tomatoes, salsa, cheese and avocado.
Chicken and Zoodles Marinara Skillet
Combine chopped chicken, zucchini noodles and marinara in a nonstick. Heat until bubbly.

Rotisserie chicken has been a real “life saver” for the past four months as I have been on my Weight Watcher mission. Especially in the early days when I would be ravenous when I got home from work, I would begin in the mid-afternoon to focus on just how deliciously satisfying that hot, tasty chicken would be, and this would help me avoid falling into something not so healthy. Favorite way to enjoy it? Hot and straight out of the container! I’d stop and pick one up on the way home from work and dive in as soon as I got in the kitchen. Saved me on many a day! Love it! Oh I love using rotisserie chicken in so many dishes! I think my favorite is to make a chicken salad I have been making for years and the rotisserie chicken makes it so easy. I cook up noodles, add mayo light, grapes, mandarin oranges and chicken! It is so good after chilled in the fridge! Your chicken and wild rice salad looks so yummy! I also want to try those Asian Chicken Lettuce Wraps!!!

I really like chicken salad, so I use the chicken, celery & I use reduced fat olive oil mayo (which is only 1 point per tablespoon) and a little Tony Chachere’s seasoning to give it a little zing.

Favorite use of leftover rotisserie chicken is in mason jar salads that I take to work each day. Just throw in some spices and/or different dressings, the taste can be different each day.

BEST ROTISSERIE CHICKEN & RICE RECIPE EVER: Shred and add, low fat/low sodium cream of chicken soup and cream of mushroom soup (google recipe on how to make), along with already cooked brown rice and peas (or sometimes I use asparagus or broccoli) and 1 can of skim milk, mix together, bake at 350 for 25 min..DELISH!!!
