WW Recipe of the Day: Easy Edamame Chicken Salad

I like to call this my favorite Japanese Chicken Salad. There are so many Chinese/Asian Chicken Salads out there, this is a refreshing take inspired by flavors you’d find in a Japanese restaurant—edamame and wasabi.

The honey in the Wasabi vinaigrette balances it nicely, so it’s not overly hot. But you can always add more wasabi paste to the dressing for a little more spice!

How to Make Edamame Chicken Salad with Wasabi Vinaigrette, Step-by-Step

Step 1: Gather and prepare all ingredients.

Step 2: If using frozen edamame, place in a strainer (affiliate link) and rinse under cold water until thawed. Drain well and add to a large bowl. For fresh edamame, simply add to a large bowl.

Step 3: Add shredded cabbage, shredded chicken and sliced green onions to bowl with edamame.

Step 4: Prepare Wasabi Vinaigrette dressing and pour 3/4 cup over salad and toss until thoroughly combined.

Step 5: Divide mixture among salad plates (or bowls), about 2 cups salad each. Top with chopped peanuts, if desired.

How to make Wasabi Vinaigrette

Step 1: Gather all ingredients:

  • 2/3 cup rice vinegar
  • 2 tablespoons canola oil
  • 3 tablespoons honey
  • 2 teaspoons prepared wasabi paste
  • 1/4 teaspoon salt
  • 2 garlic cloves, pressed

Serving Suggestions

If shredded cabbage is not your thing, try spinach instead. Substitute 12 ounces fresh baby spinach for the Napa cabbage. Add mandarin oranges, sliced almonds and thinly sliced red onions before tossing with Wasabi vinaigrette for a nice variation.

Ingredients 

  • 1-1/2 cups shelled edamame (green soybeans)
  • 6 cups shredded Napa (Chinese) cabbage
  • 3 cups shredded cooked chicken breast
  • 4 green onions, thinly sliced
  • 3/4 cup Wasabi Vinaigrette
  • Chopped peanuts (optional)

Wasabi Vinaigrette

  • 2/3 cup rice vinegar
  • 2 tablespoons canola oil
  • 3 tablespoons honey
  • 2 teaspoons prepared wasabi paste
  • 1/4 teaspoon salt
