There’s something I love about letting my slow cooker work its magic, turning simple ingredients into a rich, comforting meal with almost no effort. This slow-cooked chicken thighs recipe with beer and Herbes de Provence (affiliate link) is one I make again and again because it’s just so easy and delicious. I only need a handful of ingredients, and before I know it, I have tender, juicy chicken infused with the fragrant herbs of Provence, balanced by the subtle maltiness of beer.

I find this dish perfect for a cozy weeknight dinner or even when I want to impress without a lot of fuss. I like to serve it with mashed potatoes, mashed sweet potatoes, rice, or crusty bread—anything that lets me soak up every drop of that flavorful sauce. For me, it’s the kind of home-cooked comfort that makes life feel a little more special.

I think I found the recipe in Not Your Mother’s Slow Cooker Cookbook (affiliate link), but I can’t be sure and have no way to check because the book is in Wisconsin and I’m here in Phoenix.

Ingredients

  • Olive oil – Any neutral cooking oil will work. This is for giving the thighs a quick brown in the skillet before adding them to the slow cooker, a step you can skip when you are pressed for time.
  • Skinless chicken thighs – I often opt for boneless skinless chicken thighs for this recipe. If you opt for breasts, remember that they will be tender in less time.
  • Salt and pepper – The most basic of seasonings.
  • Beer – I use a light beer, but feel free to experiment.
  • Herbes de Provence (affiliate link) – You can find Herbes de Provence in the spice aisle. I got mine at Penzeys Spices here in Phoenix. The ingredients list includes: rosemary, cracked fennel, thyme, savory, basil, tarragon, dill weed, oregano, lavender, chervil and marjoram. Use whatever blend of dried herbs you like best. Italian seasoning and poultry seasoning would work well.
  • Bay Leaves – Since bay leaves are tough and not meant to be eaten, they’re typically added whole to soups, stews, and braises and removed before serving. Their magic lies in their ability to round out flavors, making everything taste a little more balanced and complete.

Step By Step Instructions

Ideal slow cooker size: 4-Quart.

Step 1: Coat the ceramic insert of your slow cooker with cooking spray.

Step 2: Brown the chicken – Heat 2 teaspoons olive oil in a large skillet (affiliate link) over medium high heat. Sprinkle the chicken thighs with salt and pepper and add to the skillet. Cook until they are lightly browned, about 3 minutes, and then turn them over and brown on the other side, about 3 minutes more. Transfer the chicken to the slow cooker.

Step 3: Deglaze the pan – Return the skillet to the stove. Add the bottle of beer to the skillet, and heat until boiling, stirring to incorporate all the browned bits that are on the bottom of the pan. Stir in the herbes de provence and bay leaves, and cook for another minute or so. Pour the beer mixture into the slow cooker over the chicken thighs.

Step 4: Slow Cook Until tender – Cover and cook on HIGH, until the thighs are fork tender, about 4-1/2 hours.

Cooking Notes

It’s the kind of dish, that’s so simple – just some chicken thighs, salt and pepper, a bottle of beer, Herbes de Provence and a bay leaf or two – you really don’t need a recipe.

We prefer chicken thighs in the slow cooker. They stay moist and tender, unlike chicken breasts that can dry out and get stringy.

You can find Herbes de Provence in the spice aisle. I got mine at Penzeys Spices here in Phoenix. According the the back of the jar, “Herbes de Provence has been popular for centuries, combining traditional French herbs, Italian fennel, and lavender blossoms.” Who knew? The ingredients list includes: rosemary, cracked fennel, thyme, savory, basil, tarragon, dill weed, oregano, lavender, chervil and marjoram.

The recipe directs you to give the thighs a quick turn in the skillet before dumping them into your slow cooker, but if you are short on time you can skip this step. Enjoy!

Once again, these slow cooker cooker chicken thighs cooked with beer and herbes de Provence were gobbled up. You really don’t taste “beer” in the cooked dish at all. At least I can’t. Even my Mom, who is not a beer fan, thought it was delicious. But if you’re not convinced, you could always substitute the same amount of chicken broth instead.

  1. Do you make this with boneless chicken thighs or thighs with bones? Does it matter? The recipe doesn’t specify this and I can’t tell from the recipe photo. Thanks!

    1. Hi Petra, I used boneless skinless thighs but I think either would work. If you use the thighs with bones, I’d remove the skin. Hope this helps. ~Martha

    Thank you for your response about the nutritional information. Did I read somewhere that this is only 3 Points on Weight Watchers?

    I am rating this 5 stars because it has wonderful flavor for such a simple dish. I will be making this often. I think I may also try it with a buttery oak Chardonnay in place of the beer. Has anyone tried that?
