There is something about the invigorating energy of springtime that makes eating lighter and healthier feel easy and natural.
Learning, or re-learning, how to eat with the seasons is one of the best things we can do for our health, happiness and wallets. Food that is in season tastes better, is more nourishing and costs less. A triple win.
Foods that are in season (in the northern hemisphere) right now include: asparagus, artichokes, sweet onions, spinach, apricots, radishes, mangoes, strawberries, rhubarb, peas and leeks.
Today I’m sharing a few easy healthy recipes that highlight these ingredients. Naturally light and nutrient rich, they are the perfect way to jumpstart your weight loss in a nourishing way.
Easy, Healthy Low Calorie Spring Recipes for Weight Management

5-Ingredient Asparagus Minestrone
Talk about simple and delicious. Just toss all the ingredients together in a large saucepan and let simmer until tender, about 10 minutes. So easy and satisfying.

Perfect alongside most any grilled or roasted fish or meat including lamb, chicken and salmon, if you’ve never had roasted asparagus you’re in for a treat. Even folks not that fond of vegetables—including my mom—have been won over by it.

For this chicken stir-fry dinner, it’s easy, the prep is easy: Cube the meat, combine the liquids, prepare the asparagus and stir-fry everything until done, which takes less than 10 minutes. Perfect for a busy weeknight.

This high protein, low carb open faced omelet goes well with a small green salad and perhaps some warm crusty bread (baguette), which is all you really need to complete this snack and transform it into a WW friendly lunch or light supper.

If you are a fan of fruit flavored salsas from the jar you owe it to yourself to try this fresh from scratch one. This was just the right thing to perk up our pork. It would be great on grilled chicken, shrimp or fish too.
