Ingredients & Substitutions

Strawberries

Fresh strawberries give this mousse its beautiful color and naturally sweet (affiliate link) flavor.

Frozen strawberries can also work. Just thaw and drain them first.

Silken Tofu

This is the secret ingredient.

Silken tofu is soft, smooth, and blends beautifully into desserts. It provides creaminess without the need for heavy cream or cream cheese.

Be sure to use silken or soft tofu, not firm or extra-firm tofu.

Apple Juice

Adds a little natural sweetness and forms the base of the thickened fruit mixture.

White grape juice can also be substituted.

Agave Nectar

How to Make Vegan Strawberry Mousse

Step 1

Place six small ramekins or dessert dishes on the counter.

In a medium saucepan whisk together:

  • Apple juice
  • Agave nectar
  • Cornstarch
  • Salt

Heat over medium, whisking constantly until the mixture thickens.

Remove from the heat and cool for about 10 minutes.

Step 2

Place the cooled mixture into a blender (affiliate link) or food processor (affiliate link) along with:

  • Strawberries
  • Drained silken tofu

Blend until completely smooth and creamy.

Step 3

Divide the mousse evenly among serving dishes.

Cover and refrigerate for at least 4 hours, or overnight.

Serve chilled.

What is Silken Tofu?

If you’ve never baked or cooked with silken tofu before, this is a wonderful place to start.

Unlike regular tofu, silken tofu is:

  • Soft and creamy
  • Unpressed
  • Shelf stable in many grocery stores
  • Mild tasting
  • Ideal for desserts, smoothies, puddings, and sauces

Once blended, it becomes incredibly silky and creamy—perfect for mousse.

Recipe Notes

This mousse is lightly sweetened and highlights the fresh strawberry flavor.

Ingredients 

  • 1 cup unsweetened apple juice
  • 1/3 cup agave nectar or honey
  • 1/4 cup cornstarch
  • 1/8 teaspoon fine sea salt
  • 2-1/2 cups hulled strawberries, chopped
  • 1-2/3 cups drained soft silken tofu

Instructions 

  • Gather six 6-ounce ramekins or dessert glasses, and set aside.
  • In a medium saucepan, stir together apple juice, agave nectar, cornstarch and salt. Over medium heat, bring to a simmer and stir often.
  • Reduce heat and continue to simmer, stirring constantly until thickened, about 30 seconds.
  • Remove saucepan from heat and cool for 10 minutes. (Will be very thick.)
  • In a food processor (affiliate link), or high-powered blender, add cooled apple juice mixture, chopped strawberries and tofu. Purée until smooth and creamy.
  • Divide mousse evenly among ramekins or dessert glasses.
  • Covert and refrigerate for at least 4 hours, until well chilled, or up to 1 day.

You’ll definitely want to use silken, or soft, tofu to make this mousse. Unlike regular tofu, silken tofu is sometimes packaged in aseptic boxes (also known as drink boxes) that do not need to be refrigerated.
Because of this, you may find silken tofu in another part of your grocery store, apart from the refrigerated section which usually stores regular tofu.
