The concept couldn’t be simpler—arrange your protein and vegetables on a rimmed baking sheet (affiliate link), season well, and roast in a hot oven. In 30 minutes or less, you have a complete, flavorful meal with almost no hands-on effort. And if you line the pan with foil or parchment first, cleanup is practically effortless too.

Sheet pan cooking is also wonderfully flexible. Once you understand the basic method, you can mix and match proteins and vegetables based on what you have on hand, what’s in season, or what your family loves. It’s one of the best tools in the weeknight cooking arsenal.

Tips for Sheet Pan Success

A few simple tips that make a real difference:

  • Use a rimmed baking sheet (affiliate link). The rim keeps juices from spilling and helps everything roast rather than steam.
  • Line with foil or parchment. This is the cleanup secret. A foil-lined pan means little to no scrubbing afterward.
  • Don’t crowd the pan. Ingredients need space around them to roast properly. Too crowded and they’ll steam instead of getting those lovely golden edges. Use two pans if needed.
  • Cut vegetables to similar sizes. Uniform pieces cook evenly so nothing ends up overdone while something else is still raw.
  • Pat proteins dry before seasoning. Moisture on the surface of chicken or shrimp will steam rather than roast. A quick pat with paper towels makes a big difference.
  • Roast at high heat. Most sheet pan dinners do best at 400°F to 425°F, which gives you nicely roasted, slightly caramelized results rather than pale, soft vegetables.
