Summer always puts me in the mood for tacos. It must be something about the heat and humidity that reminds me of Mexico.
They are the perfect summer food, especially when you use your slow cooker to make the filling. Then you can use the leftovers to make burritos, enchiladas, quesadillas, crunchy lettuce wraps or tasty salad toppings.
