Italian Sausage
I often use turkey or chicken Italian sausage to keep things lighter, but traditional pork sausage works beautifully too. Sweet, hot, or a combination of both are all delicious.
Potatoes
Russet potatoes work well, but Yukon Gold or red potatoes are excellent substitutes.
Bell Peppers

How to Make Sheet Pan Sausage, Peppers and Potatoes
Step 1: Preheat the Oven
Heat the oven to 450F degrees.
Line a large rimmed sheet pan or roasting pan with parchment paper or foil for easy cleanup.
Step 2: Prepare the Ingredients
Place the sausage pieces, potatoes, peppers, onions, and garlic (if using) on the sheet pan.
Step 3: Season
Drizzle with olive oil.
Sprinkle with oregano, salt, and pepper.
Toss everything together until evenly coated.
Spread the mixture into a single layer.
Step 4: Roast
Bake for 45 to 60 minutes, stirring every 20 minutes or so.
The dish is ready when the potatoes are tender and the sausage is browned.
Step 5: Serve
Serve hot with crusty bread, a simple green salad, or all by itself.
Recipe Notes
The key to good sheet pan dinners is avoiding overcrowding. If the pan is too full, the vegetables will steam instead of roast.
For extra browning, make sure everything is spread into a single layer.
If your vegetables finish before the potatoes, simply remove them and continue cooking the potatoes until tender.
Easy Variations
Add Chicken
This variation comes directly from my family’s recipe collection.
Add:
- 1 whole chicken (2½ to 3½ pounds), cut into pieces
- 6 canned Italian plum tomatoes, crushed with their juice
Roast alongside the sausage and vegetables for about 1 hour, until the chicken is cooked through and the potatoes are tender.
Add More Vegetables
Try adding:
- Mushrooms
- Zucchini
- Broccoli
- Cauliflower
- Cherry tomatoes
Make It Spicy
Use hot Italian sausage and add a pinch of crushed red pepper flakes.
Herb Lovers Version
Add fresh rosemary, thyme, or parsley before serving.

Sheet Pan Sausage, Peppers and Potatoes

Ingredients
- 1 pound Italian turkey sausage, hot, sweet, or mixed, each cut crosswise into 3 chunks
- 2 large baking potatoes, peeled and each cut into 8 pieces
- 2 large bell peppers, seeded and cut into 1-inch strips
- 2 medium onions, each cut into 8 wedges
- 2 garlic cloves, minced (optional)
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 450F degrees. For easy cleanup line a large roasting pan (large enough to comfortably fit all the ingredients in a single layer) with aluminum foil. (I like to use a half sheet pan.)
- Place the sausage, potatoes, peppers, onions and garlic (if using) in the pan.
- Drizzle the olive oil over the ingredients. Season with the oregano, salt and pepper. Toss to coat everything with the oil and seasonings.
- Roast in the oven until the potatoes are tender and the sausage is browned, 45 to 60 minutes, stirring the mixture every 20 minutes or so.

Roast for about 1 hour. The dish is done when the potatoes are tender and the chicken easily pulls away from the bone. This version will serve 4 to 6.

It’s delicious with eggs and turn left overs without the peppers into soup with chicken broth add some Kale.
Oh mom always added sweet potatoes too so that is what I do that really makes a nice contrast with the peppers & sausage and Publix makes a soup like that too.

I made this and it was very easy and tasty. The question I had was the temp of the oven. It says 450 degrees in the recipe. I only cooked it at 425 degrees and it was way overcooked. I think next time I will try 375 degrees.
