I’ve been a cottage cheese fan since the 1970s, long before it became the trendy high-protein ingredient it is today.

Back then, cottage cheese was mostly thought of as diet food, often served with fruit or a scoop of tuna salad. But I’ve always appreciated how versatile it is.

I still enjoy it straight from the container, but these days I’m just as likely to blend it into a creamy sauce, stir it into scrambled eggs, or use it in a simple dessert.

Cottage cheese is an affordable, convenient source of protein, and it works beautifully in both sweet and savory recipes.

One of my favorite tricks is to blend cottage cheese until smooth and creamy. It becomes almost like a soft cream cheese or thick yogurt, making it especially useful in dips, sauces, smoothies and desserts.

If you’ve never been a fan of cottage cheese because of its lumpy texture, blending it might change your mind.

  1. We tried the cottage cheese muffins and made the following delicious changes:
    1/4 butter > 1/4 cup coconut oil
    1 1/2 cup flour > 1 1/2 cup whole wheat flour
    1 egg > 1 Tbsp ground flax+ 3 Tbsp water
    milk > skim milk
    cottage cheese > fat free cottage cheese
    Added: 1 tsp vanilla and 1 tsp cinnamon.
    Decreased oven temp to 350. Baked 20 minutes.
    These are delicious, lightly sweet, and definitely a keeper!
