Skinny Healthy Pumpkin Dessert Recipes

Are you looking for a healthy pumpkin dessert recipe other than healthy pumpkin pie, healthy pumpkin cake or healthy pumpkin cookies?

I’m a huge pumpkin fanatic and have yet to meet a pumpkin dessert I didn’t like.

For me, Thanksgiving wouldn’t be complete without a pumpkin dessert or two.

But these days, I’m on the lookout for desserts that won’t bust the calorie bank. Saving a few calories here and there can really add up at the end a day or week or month. And losing weight and keeping it off really can be that simple.

I’ve scanned the web and all my favorite light cooking recipe sites to assemble a great collection of low-fat healthy pumpkin dessert recipes: pumpkin custards, low-fat pumpkin flan, low-fat pumpkin bread pudding, pumpkin pie dip, pumpkin milkshakes, pumpkin nog, lighter pumpkin trifle, pumpkin rice pudding and a lighter version of pumpkin dump cake -a pumpkin dessert recipe with yellow cake mix, and then calculated their Weight Watchers PointsPlus values for them.

I’ve also included my favorite recipe for Easy Creamy Pumpkin Mousse that is incredibly simple and delicious.

Skinny Pumpkin Mousse Recipe

An easy mousse recipe that tastes a lot like pumpkin pie, but is far more light and creamy. Garnish with a gingersnap if you like.

Ingredients
  • 1 (4 serving size) package fat-free sugar-free instant butterscotch pudding mix
  • ¾ cup low-fat milk
  • 1 can (15 ounces) pumpkin puree
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • 3 cups light whipped topping, thawed
Instructions
  1. In a large bowl, whisk the pudding mix and milk until slightly thickened.
  2. Add the pumpkin, cinnamon, ginger and clove and whisk until well blended.
  3. Gently fold in the whipped topping, one third at a time.
  4. Pour ½ cup of the mousse into each of 8 serving dishes. Chill for at least 30 minutes before serving.

Nutritional estimates per serving (1/2 cup): 100 calories, 3.5 fat, 14 g carbs, 1 g protein, 2 g fiber and 2 Weight Watchers PointsPlus. You can substitute vanilla pudding if you prefer. If you want richer mousse, beat ½ cup light tub-style cream cheese into the pudding mix before adding the milk. (This will add 30 calories and 2 grams of fat per serving.)
