How to Make Apple Spice Cake Mix Cupcakes

Step 1: Gather and prepare all ingredients. Preheat oven to 350F degrees. Lightly grease a standard muffin pan and set aside.

Step 2: Add the apple pie filling to a large mixing bowl (affiliate link) and mash apples into small to medium chunks.

Step 3: Gradually sift cake mix into mashed apple mixture and stir until thoroughly combined.

Step 4: Divide batter evenly between 12 cups of prepared muffin pan. Each cup will be about 3/4 full.

Step 5: Bake for 16 – 18 minutes, or until cupcakes are set and a toothpick inserted in the center comes out clean.

Step 6: Cool pan on a wire rack for about 10 minutes. Once cool enough to handle, remove cupcakes and place on a cooling rack (affiliate link) to cool completely.

Step 7: If desired, lightly frost cupcakes before serving or enjoy them plain or with a dusting of confectioner’s sugar.

Recipe Notes

When mixing the batter, you may find it easier to gradually sift the dry cake mix into the mashed apple pie filling rather than dumping in the entire cake mix. It may be a little harder to get all the cake mix incorporated if you just pour it all in and may end up with dry spots throughout the batter.

I’ve now made this recipe several times and find it much simpler to slowly sift the cake mix in while stirring to combine. It takes a few extra minutes, but so worth the effort.

How to Make These Cake Mix Cupcakes More WW Friendly (Low Sugar Variation)

  1. Substitute no sugar added apple pie filling. There are several brands available including Lucky Leaf, Duncan Hines & Great Value.
  2. Substitute a sugar free white or yellow cake mix and the following spices in place of the spice cake mix:
    • 1 teaspoon cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground cloves or allspice. (Or use 2 to 3 teaspoons of pumpkin pie spice.)

These changes lower the WeightWatchers Points from 10 to 4.

  • 1 box (15.25 ounces) Perfectly moist spice cake mix

  • Gather and prepare all ingredients. Preheat oven to 350F degrees. Lightly grease a standard muffin pan and set aside.
  • Add the apple pie filling to a large mixing bowl (affiliate link) and mash apples into small to medium chunks.
