When you are having a craving for cake, but don’t want to be bothered with making a whole cake and then dealing with all the leftovers (and temptations), a mug and microwave (affiliate link) can quickly come to the rescue, as this easy vanilla mug cake proves.

Just stir together a little cake mix, some fat-free yogurt and a little water in a microwave-safe mug and about 2 minutes later you’ll be rewarded with a delicious little single serving cake that can be enjoyed plain or with your favorite topping.

Ingredients & Substitutions

  • Vanilla Cake Mix (dry, unprepared) – I used Betty Crocker Super Moist mix. Any white or yellow cake mix would work. Sugar free cake mix would lower the calories and WW Points.
  • Fat-free vanilla yogurt – If you only have plain yogurt add a couple drops of vanilla extract.

How to Make Microwave Vanilla Mug Cake for One, Step-by-Step

Step 1: Gather and prep

Gather and prepare tools & ingredients. Spray a microwave-safe mug with nonstick baking spray.

Step 2: Mix

Add the cake mix, yogurt and 2 tablespoons water to mug and mix well.

Microwave on HIGH power for 2 minutes, or until cake is set.

Step 4: Cool & Serve

Allow cake to cool and serve in mug or remove to a small plate. Top with optional toppings, if desired.

Recipe Notes

If you need fat-free vanilla yogurt and only have plain on hand, simply measure out your 2 tablespoons plain fat-free yogurt and stir in a couple drops pure vanilla extract.

Different mug sizes may affect cooking times. The mug I used for this cake is quite large, so it resulted in larger, flatter cake that was done in about 2 minutes. If your mug is smaller, your cake probably won’t be as wide, but will likely be taller and you may need to adjust the cooking time accordingly.
