Today I’m sharing a new quick and easy delicious dessert. Microwave Mug Pineapple Cake comes together in minutes with just 3 ingredients.

It’s a great WW friendly single-serving version of another longtime reader favorite here on Simple Nourished Living, 2-Ingredient Pineapple Angel Food Cake. Rod and I were immediate fans as soon as we tasted it.

How to Make Microwave Pineapple Cake

Step 1: Gather and prepare the ingredients.

Step 2 Mix ingredients in a microwave-safe mug or small bowl (affiliate link) sprayed with nonstick spray. Microwave (affiliate link) for 1 minute, or until set.

Recipe Notes, Variations & Substitutions

Use whatever flavor cake mix you prefer. White, yellow, golden butter, lemon, pineapple, funfetti, carrot cake, vanilla, cherry chip and spice cake mix would all work well in this recipe.

What to Serve with this Quick & Easy Pineapple Mug Cake?

While the whipped topping is optional, it’s highly recommended. I’ve also used a dollop of vanilla yogurt or frozen yogurt with good success. This would be yummy alongside a serving of fresh fruit too.

Ingredients 

  • 3 tablespoons yellow cake mix
  • 1.5 tablespoons crushed pineapple, not drained
  • 1 tablespoon egg white (about 1/2 large egg white)
  • light whipped topping, if desired

Instructions 

  • Spray a microwave (affiliate link)-safe mug or bowl with nonstick cooking spray.
  • Stir together the cake mix, pineapple, and egg white in the prepared mug or bowl until well combined.
  • Microwave for 1 minute, or until set.
