It's a great WW friendly single-serving version of another longtime reader favorite here on Simple Nourished Living, 2-Ingredient Pineapple Angel Food Cake. Rod and I were immediate fans as soon as we tasted it.

What to Serve with this Quick & Easy Pineapple Mug Cake?
While the whipped topping is optional, it's highly recommended. I've also used a dollop of vanilla yogurt or frozen yogurt with good success. This would be yummy alongside a serving of fresh fruit too.

- 1.5 tablespoons crushed pineapple, not drained
- 1 tablespoon egg white (about ½ large egg white)
- light whipped topping, if desired

- Stir together the cake mix, pineapple, and egg white in the prepared mug or bowl until well combined.
