How to Make this 2-Ingredient Orange Angel Food Microwave Mug Cake
Step 1: Gather and prepare all ingredients.

Step 2: Spray a microwave-safe mug, or small bowl (affiliate link), with nonstick spray.
Step 3: Add mandarin orange segments to mug and completely mash with a fork.

Step 4: Add the cake mix and stir until thoroughly combined.

Step 5: Microwave (affiliate link) on high (100%) power until set, about 1 minute and 15 seconds (time may vary depending on microwave strength).

Step 6: Enjoy directly from mug or remove to a small plate.

Recipe Notes and Variations
To not overcook this cake, cook for 1 minute then stop and see if it’s set. If not, continue cooking on high in 15 second increments until set.
All the mashed mandarin orange pieces sink to the bottom, so if you lightly peel the cake away from the sides of the mug with a fork, it should drop out onto a small plate with the bottom on top. I think this makes a nicer presentation!
Flavor Variations
No mandarin oranges? Choose 2 tablespoons of any canned fruit with juice. Pineapple, Peaches, Pears, Fruit Cocktail would all be delicious.
