Naturally fat-free, this single serving Mandarin orange angel food mug cake is ready in minutes and can be prepared fuss-free anytime you have an unexpected urge for cake.
2tablespoonsmandarin orange segments in juice, not drained
1/4cupangel food cake mix
Instructions
Spray a microwave-safe mug, or small bowl, with nonstick spray.
Add mandarin orange segments to mug and completely mash with a fork.
Add the cake mix and stir until thoroughly combined.
Microwave on high (100%) power until set, about 1 minute and 15 seconds (time may vary depending on microwave strength). To not overcook, start with 1 minute and check for doneness. If not set, continue cooking in 15 second increments.
Enjoy directly from mug or remove to a small plate.

Variations
No mandarin oranges? Choose 2 tablespoons of any canned fruit with juice. Pineapple, Peaches, Pears, Fruit Cocktail would all be delicious.
