You’ve come to the right place. I’m a longtime lifetime Weight Watcher and banana bread lover. Banana bread is my favorite way to use up over-ripe bananas that might otherwise go to waste. Delicious and sweet, banana bread makes a great breakfast, quick snack or healthier version of dessert.

Always wanting to experiment with new WW friendly recipes, I rarely make banana bread the same way twice. I’m always trying out different recipes and flavor combinations.

This low fat banana bread recipe comes from an unexpected source. Not from my Weight Watchers cookbooks cookbooks, but from my very first cookbook – The Fannie Farmer Cookbook (affiliate link) by Marion Cunningham.

What I love about this banana bread recipe is its simplicity. Just 7 basic ingredients: ripe bananas, eggs, flour, sugar, salt, baking soda and nuts. The only fat in the recipe comes from the egg yolks and walnuts. You can always make it richer by adding oil, buttermilk, yogurt or milk and make it a more typical Weight Watchers recipe by using your favorite non-calorie sweetener in place of the sugar.

The whole recipe calls for just 1/3 cup of oil. The results were as promised – a moist banana bread recipe. A slice of this moist banana bread has 237 calories, *7 PointsPlus, *8 Freestyle SmartPoints. A similar slice from Starbucks packs 420 calories and *11 PointsPlus. That’s a savings of 183 calories!!!

Light & Healthy Banana Bread Recipe

Here's another delicious and healthy recipe for Weight Watchers banana bread that uses a combination of unsweetened applesauce and nonfat Greek yogurt in place of oil or butter. 
Prep: 15 minutes
Cook: 55 minutes

Ingredients 

  • 1-1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour, (I prefer white wheat flour)
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 medium ripe bananas, mashed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain nonfat Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat your oven to 350°F. Grease a 9×5 inch loaf pan (affiliate link) with cooking spray.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, and salt.
  • In a separate bowl, mix together the mashed bananas, applesauce, Greek yogurt, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Pour/scrape the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
  • Remove from the oven and allow the bread to cool in the pan for 5-10 minutes. Remove the bread from the pan and place it on a wire rack to cool completely.

The typical banana bread recipe is made with ripe bananas, all purpose flour or self-rising flour, sugar or brown sugar, whole eggs, and generous amounts of vegetable oil or butter. It also often includes nuts or chocolate chips for added texture and flavor. There are many things you can to to create a tasty banana bread that is lower in fat, sugar, calories and WW Points:

  1. Use overripe bananas: Ripe bananas with lots of brown spots are naturally sweeter, so you’ll need less sugar in your recipe.
  2. Use a sugar substitute: Use a sugar substitute such as Stevia or Splenda instead of regular sugar or brown sugar
  3. Use whole wheat flour: Whole wheat flour is more nutritious and has more fiber than white flour. It also imparts a nutty flavor.
  4. Use nonfat Greek yogurt: Nonfat Greek yogurt can replace oil or butter in your recipe and add protein. Less oil means fewer calories and Weight Watchers points.
