My favorite thing to make with overripe bananas is banana bread. Of all the versions I have tried over the years, I keep coming back to simple recipes that don’t require a long ingredient list or much fuss.
I never thought to make banana bread with a cake mix until I found myself low on flour—and I am so glad I tried it. This 3-ingredient banana bread is surprisingly light, tender, and easy, and everyone who’s tasted it has been pleasantly surprised by how good it is.
All you need are ripe bananas, eggs, and a box of cake mix. That’s it. It is one of those back-pocket recipes that comes in handy more often than you’d expect.

If you use a sugar-free yellow cake mix, the WW Points are lower. According to the WW Recipe Builder:
- Regular yellow cake mix: 82 Points (dry mix)
- Sugar-free yellow cake mix: 43 Points
That’s a savings of 39 Points per recipe, which can make a big difference depending on how you slice it.
How to Make Easy Low Fat 3-Ingredient Banana Bread, Step-by-Step
Step 1: Gather and prep your ingredients.

Step 2: In large bowl, mash the bananas well then stir in the cake mix and eggs until well combined.

Step 3: Divide the batter evenly between the pans.

Step 4: Bake 35 to 40 minutes or until toothpick inserted in center of loaves comes out clean and inside of cracks do not look wet.

Cooking Notes
I like lining my loaf pans with parchment paper, but it’s not necessary if you’re using nonstick pans well coated with cooking spray.
Because this batter is fairly thick, spreading it evenly in the pans helps ensure even baking.
Variations
Different cake mix flavors:
White, chocolate, spice, strawberry, pineapple, butter, butter pecan, and more all work well.
Add-ins:
Chocolate chips, coconut, chopped nuts, blueberries, chopped strawberries, crushed pineapple, or even a swirl of peanut butter.
If you add mix-ins, keep portions in mind when tracking.

3-Ingredient Cake Mix Banana Bread

- 1 box (about 15.25 ounces) yellow cake mix
- 3-4 bananans very ripe, mashed
- 3 large eggs
Instructions
- Heat oven to 350°F. Generously spray 2 (8×4-inch) loaf pans with cooking spray and then line with parchment paper if desired. (The parchment paper isn't necessary but makes removal easier.)
- In a large bowl, mash the bananas well, then add the dry cake mix and eggs and mix until well combined.
- Divide the batter evenly between the pans.
- Bake 35 to 40 minutes or until toothpick inserted in center of loaves comes out clean and inside of cracks do not look wet.
- Remove from the oven and allow to cool 15 minutes in pans on wire racks. Remove loaves from pans to continue cooling on racks. Cool completely, about 2 hours, to prevent crumbling when slicing.
- Cut into 24 slices.

with the 3 ingredient banana bread recipe using the yellow cake mix, what if you used the sugar free cake mix would the points change?

Yes, using a sugar free cake mix will lower the points. According to the WW Recipe Builder the regular yellow cake mix has 82 points. The sugar free one has 43 points. So 39 points are shaved off the entire recipe or about 1 – 2 points per serving. Hope this helps. ~Martha

For the first time making it, I used a Jiffy yellow cake mix. I used 2 large bananas and 1 egg plus 2 tablespoons egg and 1/4 cup chopped walnuts. It made one 8โx4โ bread Took longer to bake almost an hour but it turned out well. I didnโt have ripe bananas so I baked them in the oven 10 minutes at 400 degrees, I think I could have baked them longer at a lower temp for more flavor. All in all, it is very moist and satisfying and slices up nice. Iโd like to try this using fruitcake mix
Made 24 cupcakes out of this recipe. They turned out great, the perfect serving size.
I freeze my bananas when I cant get to them before they go bad.
