I freeze my bananas when I cant get to them before they go bad.
Would those work to use in this recipe?
Martha McKinnon
Hi Shannon, Though I haven't tried this recipe with thawed frozen bananas, I think they should work fine. ~Martha

For the first time making it, I used a Jiffy yellow cake mix. I used 2 large bananas and 1 egg plus 2 tablespoons egg and 1/4 cup chopped walnuts. It made one 8”x4” bread Took longer to bake almost an hour but it turned out well. I didn’t have ripe bananas so I baked them in the oven 10 minutes at 400 degrees, I think I could have baked them longer at a lower temp for more flavor. All in all, it is very moist and satisfying and slices up nice. I’d like to try this using fruitcake mix
