Ingredients
1-1/2cupall-purpose flour
1/2cupwhole wheat flour(I prefer white wheat flour)
1/2cuppacked brown sugar
2teaspoonsbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
3mediumripe bananas, mashed
1/4cupunsweetened applesauce
1/4cupplain nonfat Greek yogurt
2largeeggs
1teaspoonvanilla extract
Instructions
Preheat your oven to 350°F. Grease a 9x5 inch loaf pan with cooking spray.
In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, and salt.
In a separate bowl, mix together the mashed bananas, applesauce, Greek yogurt, eggs, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined.
Pour/scrape the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
Remove from the oven and allow the bread to cool in the pan for 5-10 minutes. Remove the bread from the pan and place it on a wire rack to cool completely.
