WW Recipe of the Day: Crock Pot Sweet & Sour Cabbage Soup

For years, I avoided cabbage soup. recipes, instantly associating them with the bland and uninspiring Cabbage Soup Diet of the past. I firmly believe life is too short to settle for boring food—even in the name of weight loss.

This Crockpot Sweet and Sour Cabbage Soup changed my mind completely. It’s easy, healthy, and bursting with flavor—the exact opposite of bland! This meatless dish is incredibly simple to prepare, tastes even better as leftovers, and has all the comforting flavors of stuffed cabbage in a spoonable form.

Ingredients and Substitutions

  • Green cabbage, chopped – the basis of this simple, satisfying slow cooker soup. You could also use red cabbage if you prefer.
  • Onion, chopped – I use yellow onion, but white or red would also work.
  • Low-sodium chicken or vegetable broth (affiliate link) – I use Better Than Bouillon and water.
  • Canned diced tomatoes, undrained – feel free to substitute whole tomatoes that you chop yourself. You could also use crushed tomatoes or tomato sauce in a pinch.
  • Tomato paste – Adds a rich tomato flavor. I love the kind you get in a tube. It’s so much more convenient and less wasteful.
  • Salt + Black pepper – for simple seasoning.
  • Balsamic vinegar – or any vinegar of your choice. You could also substitute lemon juice, but I would add it at the end, to prevent it from becoming bitter.
  • Packed brown sugar – Any sweetener would work here: white sugar, honey, maple syrup, etc. You could also substitute your favorite non calorie sweetener to lower the calories and WW Points.
  • Plain non-fat yogurt or sour cream for garnish, if desired – Totally optional, but a great addition if you have it. I usually opt for yogurt since I tend to always have it on hand.

How To Make Crock Pot Sweet and Sour Cabbage Soup

Step 1: Gather and Prep your ingredients.

Step 2: A true fix it and forget it recipe. Just place all the ingredients (except yogurt/sour cream) in the crockpot. Cover and cook on LOW until the cabbage is tender (6 to 8 hours). You could also cook it on HIGH for 3 to 4 hours.

Step 3: Taste and add additional salt and pepper, if desired. Serve garnished with yogurt if desired.

Additions and Variations

Additions for More Texture and Flavor

  1. More Protein
    • Add you choice of lean meat, either raw at the onset or cooked (chopped, sliced or shredded) at the end. Chicken, turkey, beef or pork would work.
    • Stir in white beans, chickpeas, or lentils for a plant-based protein boost.
    • Include sliced kielbasa or turkey sausage for a smoky twist.
  2. More Vegetables:
    • Add diced carrots, celery, or bell peppers for extra color and sweetness.
    • Add chopped potatoes (white, red, yellow, sweet) for a heartier soup.
    • Include sliced or chopped mushrooms for a rich, earthy flavor.
    • Toss in a handful of fresh spinach or kale during the last 10 minutes of cooking for added greens.
  3. Grains:
    • Stir in cooked rice, farro, or quinoa to make it more filling.
    • Try barley for a chewy texture that complements the cabbage.
    • Add a small amount (1/2 cup or so) of uncooked grain at the beginning.
  4. Seasonings:
    • Add a pinch of crushed red pepper flakes for a little heat.
    • Stir in some smoked paprika for depth or ground ginger for a subtle spice.
    • A teaspoon of caraway seeds or dill could add a classic cabbage soup flavor.

Ingredients 

  • 1 small (1 to 1-1/4 pounds) head green cabbage, 7 cups chopped
  • 1 cup chopped onion
  • 3 cups low-sodium chicken or vegetable broth (affiliate link)
  • 1 can (14 to 15 ounces) diced tomatoes, undrained
  • 3 tablespoons tomato paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons packed brown sugar
  • Plain non-fat yogurt or sour cream for garnish, if desired

Instructions 

  • Ideal slow cooker size: 4-Quart.
  • In your slow cooker, combine the cabbage, onion, broth, tomatoes with their juices, tomato paste, salt, pepper, vinegar and brown sugar.
  • Stir to mix everything together.
  • Cover and cook on LOW for 6 to 8 hours, or until the cabbage is very tender.
  • Season to taste with additional salt and pepper.
  • Serve in bowls and dollop with a spoonful of yogurt or sour cream.

      Yes you could cook this on the stove. You want to bring it to a boil and then lower the heat and simmer until the cabbage is tender. I’d say it should take 30 to 45 minutes. Hope this helps. ~Martha

    Delicious ! A local restaurant had this soup so this recipe came up and it is better than the restaurants! Easy to make. Have made it many times to share. I ad a little fried ground beef. Enjoy!
