WW Recipe of the Day: Slow Cooker Italian-Style Mixed Bean Soup
I love making and eating homemade soups. It’s one of my tastiest, easiest strategies I know for losing weight and staying slim. So I’m excited to be sharing this super easy, tasty, hearty soup that will warm you inside and out!
All you need is 3 ingredients and a slow cooker to make this Italian Style Bean Soup:
- Ground turkey sausage
- Marinara sauce
- Bean soup mix

I used Hurst’s 15 Bean Soup which includes a seasoning packet and a combination of 15 different bean varieties. But any bean soup mix will work: 4-bean, 10-bean, 13-bean, 16-bean, etc.

How to Make WW Friendly Italian Style 15 Bean Soup
Step 1: Gather and Prep Your ingredients… Italian style turkey sausage, dry bean soup mix, marinara sauce

Step 2: Brown the sausage in a skillet. Drain and add to the crock pot along with sauce, rinsed and drained beans, seasoning packet and water.

Step 3: Cover and cook until the beans are tender. Add more water if the soup gets too thick

Recipe Notes, Substitutions and Variations
This is a thick soup. For a thinner soup, add additional water or broth.
Bulk this up: with the addition of vegetables: Chopped onion, celery, carrot, mushrooms and zucchini would all work well.
Different beans: Any bean soup mix will work: 4-bean, 10-bean, 13-bean, 16-bean, etc.
Additions: Italian seasoning blend, dried oregano, basil or herbs de’ Provence would be delicious.
Spicier: Add crushed red pepper flakes.
Southwestern: Take this 15-Bean soup in a southwestern direction by adding chile powder and ground cumin.
Vegetarian: Leave out the sausage or use your favorite vegetarian meatless crumbles instead.
What to Serve with this Italian Style 15-Bean Soup?
I like to serve this soup sprinkled with Parmesan cheese. A dollop of low fat ricotta stirred in is also creamy and delicious. Some crusty bread and/or your favorite green salad would be perfect accompaniments.
Ways to Use Soup Leftovers
The leftovers freeze beautifully, and I delight in having lots of little containers in the fridge or freezer ready to go for quick and easy lunches during the week. You may need to add a little extra broth or water to think it out a bit when reheating.
Pasta Fagioli – Add broth and cooked ditalini pasta to some of your leftover soup to create a quick and easy pasta fagioli.

Slow Cooker 3-Ingredient Italian Bean Soup Recipe

- 1 pound Italian Style Turkey Sausage
- 1 package (16 ounces) bean soup mix with flavor packet
- 1 jar (26 ounces) marinara sauce (such as Classico tomato and basil)
- 2.5 jars (empty pasta sauce jars) water
Instructions
- Ideal Slow Cooker Size: 6-Quart.
- In a large skillet (affiliate link) set over medium heat, brown and break up the sausage into crumbles. Drain any accumulated fat. Scrape the pan contents into your slow cooker.
- Rinse and drain the beans and add to the slow cooker. Add the entire jar of pasta sauce, and two and a half jars-worth of water. Sprinkle in the seasoning packet. Stir to combine.
- Cover, and cook on low until the beans are tender, about 8 to 10 hours on LOW, 5 to 6 hours on HIGH.
- If the mixture becomes to thick, add additional water to thin it down.
- Store soup in an airtight container in the refrigerator.

Excellent! Used some of your suggested additions: onion, celery, carrots, garlic, Italian seasoning blend, bit of dried rosemary, thyme, Turkish bayleaf too. Didn’t use seasoning packet that came with the beans. Used low sodium chkn broth rather than water.
