Recipe Notes, Substitutions & Variations
This is a thick soup. For a thinner soup, add additional water or broth.
Bulk this up: with the addition of vegetables: Chopped onion, celery, carrot, mushrooms and zucchini would all work well.
Additions: Italian seasoning blend, dried oregano, basil or herbs de' Provence would be delicious
Spicier: Add crushed red pepper flakes
Southwestern: Take this 15-Bean soup in a southwestern direction by adding chile powder and ground cumin
Vegetarian: Leave out the sausage or use your favorite vegetarian meatless crumbles instead.
What to Serve with this Italian Style 15-Bean Soup?
I like to serve this soup sprinkled with Parmesan cheese. A dollop of low fat ricotta stirred in is also creamy and delicious. Some crusty bread and/or your favorite green salad would be perfect accompaniments.
Ways to Use Soup Leftovers
The leftovers freeze beautifully, and I delight in having lots of little containers in the fridge or freezer ready to go for quick and easy lunches during the week. You may need to add a little extra broth or water to think it out a bit when reheating.
Pasta Fagioli - Add broth and cooked ditalini pasta to some of your leftover soup to create a quick and easy pasta fagioli.
