My Approach to Meal Planning
Every time I fall out of the meal planning habit , I find myself relying on too much takeout, restaurant food, and unhealthy snacks. It’s shocking how quickly the pounds creep back—and how lousy I feel.
When I have even a rough idea of what I’m cooking for dinner in the coming week, I’m far less tempted by fast food or takeout. But my approach to meal planning is intentionally simple. Trying to do too much overwhelms me, so I keep it SUPER EASY: just a post-it note on the counter with a few dinners I plan to make. That’s it.
Since it’s just the two of us—myself and my husband—we often have leftovers. This means plenty of ready-made lunches or dinners for the next day. I enjoy finding creative ways to repurpose leftovers into something fresh and tasty.

Ultimately, I am always asking myself, “How can I make this as easy as possible?” For me, meal planning only works when it’s simple. As long as I have a stash of easy-to-prepare, healthy foods in the fridge and pantry, I know I am setting myself up for success.
What Do I Eat for Breakfast on Weight Watchers?
Most days my breakfast is something quick like an english muffin with almond butter, one half of a banana with peanut butter, avocado toast, cottage cheese with fruit, eggs, yogurt with fruit, oatmeal or a smoothie, depending on my mood and the season.
What Do I Eat for Lunch on Weight Watchers?
Lunch is usually leftovers or some combination of soup / sandwich / salad. This formula is a proven winner for me. I never fall into the temptation of takeout when I have a jar of soup, bowl of hard boiled eggs, container or leftovers and/or salad fixings staring back at me when I open the fridge!
This Week’s WW Dinner Suggestions with Points

Air Fryer Rotisserie Chicken
I am a big fan of roast chicken. It’s easy and we can enjoy several meals with the leftovers. I’ll serve it one day with this crunchy, flavorful Broccoli Salad. If you don’t have an air-fryer or don’t feel like cooking, you can always pick up a rotisserie chicken from your favorite supermarket or Costco. Something I do often.

Leftover Ham Bone Soup (Using Bone I had stashed in the freezer)
An easy and delicious way to use up a holiday ham bone. Load your slow cooker and let it do all the work while you get on with your day. I’ll serve it with leftover broccoli salad and cornbread.

Chicken Broccoli Casserole (made with leftover rotisserie chicken)
This chicken broccoli casserole is a lightened up version of my Mom’s yummy creamy cheesy chicken broccoli casserole from childhood. I love it now as much as I did then. I’m planning to serve it with Baked Potatoes and Cucumber Salad.

Chicken Avocado Salad
This chicken salad is another easy, healthy and delicious recipe, perfect for using up leftover cooked chicken. It’s from The Short-Cut Cook: Make Simple Meals with Surprisingly Little Effort (affiliate link) by Jacques Pépin. In the recipe’s notes, Jacques says that this chicken avocado salad is a great way to use leftover chicken. I couldn’t agree more. We will have ours with cornbread.

BLT Avocado Toast
This delicious BLT Avocado Toast is topped with fresh avocado, hard-boiled egg, tomato, bacon crumbles, sprouts and everything bagel seasoning (affiliate link). It’s perfect for a light supper with fresh fruit. If you are extra hungry a mug of WW zero point vegetable soup would be delicious alongside.
