I love how truly “impossible” this WW friendly chicken and broccoli pie is to make. With just a few simple ingredients, minimal chopping, and a quick stir of Bisquick (or my homemade baking mix), milk, and eggs, you can have dinner in the oven in about 15 minutes.
This light and healthy chicken pie bakes up golden, cheesy, and satisfying — perfect for a weeknight dinner, a cozy brunch, or even a make-ahead lunch. It’s one of those classic Bisquick recipes made lighter I come back to again and again because it’s simple, comforting, and always a crowd-pleaser.

Why You’ll Love This Chicken and Broccoli Pie
- Quick and easy – with minimal chopping and just a few simple ingredients, this pie is ready for the oven in about 15 minutes.
- WW friendly – lighter than the classic Bisquick impossible pies, this version fits right into a healthy eating plan without sacrificing flavor.
- Versatile – I make it most often for dinner, but it also works beautifully for brunch, lunch, or meal prep.
- Comforting and satisfying – cheesy, golden, and full of protein and veggies, it’s the kind of homestyle dish that always feels like a win.
- Make-ahead friendly – you can assemble the pie up to a day in advance, cover and refrigerate it, then bake when ready. Just plan to add a few extra minutes since it will be starting cold.
Ingredients for Chicken and Broccoli Pie
- Chicken – I usually use cooked chicken breast or rotisserie chicken to keep things quick. Turkey works just as well if that’s what you have on hand.
- Broccoli – frozen broccoli florets make this extra easy, but fresh lightly steamed broccoli works too. You could also swap in frozen mixed vegetables for more variety and color.
- Onion – adds flavor and a little texture. For a milder taste, I sometimes use green onions (scallions) instead.
- Cheddar cheese – I like using sharp reduced-fat cheddar for more flavor with fewer calories, but any shredded cheese you love will work here.
- Baking mix – Bisquick is the classic choice, but I often make my own healthy baking mix instead.
- Milk – I usually use skim or low-fat milk, though any milk or unsweetened non-dairy alternative should work.
- Eggs – they bind everything together and help create the “impossibly easy” crust.
- Seasonings – a simple mix of salt and black pepper works, but garlic powder, Italian seasoning, or a pinch of red pepper flakes can add a fun twist.

Recipe Notes
This recipe really is as simple as it sounds. I usually grab a bag of frozen broccoli florets, but fresh broccoli that’s lightly steamed works just as well. If I’m looking for more variety, I’ll sometimes swap in a frozen mixed vegetable blend instead.
Chopped onion adds a nice flavor boost, but if you want something milder, scallions are a good alternative. And while cheddar is classic, you can use whatever shredded cheese you have on hand — mozzarella, Monterey Jack, or even a cheese blend will all work.
If you want to plan ahead, you can assemble the pie up to 24 hours in advance, cover it, and refrigerate. Just remember to add a few extra minutes to the bake time since you’ll be starting with a cold dish.
For feeding a crowd, I like to double the recipe and bake it in a 9×13-inch casserole dish (affiliate link). It’s just as easy and makes plenty for family gatherings or meal prep.

Storing & Heating Leftovers
Any leftover broccoli pie can be store in an airtight container in the refrigerator or freezer for future quick and easy meals. Leftover slices make a great lunch to take to work and can be reheated quickly in the microwave (affiliate link).
Slices of Impossibly Easy Pies are as easy to reheat as they are to make. To reheat in the microwave (affiliate link), just arrange slices evenly spaced and with points toward the center on a large microwavable plate. Cover with a paper towel or waxed paper (except those with a cheesy topping) and heat on medium for 2 to 3 minutes. Repeat as needed until warmed through. Let stand for 1 to 2 minutes before serving.

I don’t eat cheese. Is there anything I can substitute for it?
Hi DD,
You could just leave it out. Hope this helps. ~Martha
Delicious, easy and easy on the points budget! Love that I can freeze leftovers so someday soon I don’t have to cook dinner!
This pie was so good, and easy, like you said. I felt like I was eating forbidden food! Next time I need to cut the chicken up into smaller chunks, but we loved it.
We loved this meal! So tasty. I added some Dijon mustard and some oregano for additional flavor. My husband thought it was delish also.
What is the sodium amount for each piece, please?
Absolutely love this ! This will definitely be a repeat in our home ….. husband said it’s awesome, too.
This is a great impossible pie. Such an easy meal with a lettuce and tomato salad. Thanks for sharing all the recipes!
