1/2cupBisquick baking mix (I used my own healthy baking mix)
1cuplow fat milk (I used unsweetened almond milk beverage)
1/2teaspoonsalt
1/4teaspoonpepper
2eggs, lightly beaten
Instructions
Preheat oven to 400F. Light grease a 9-inch round pie dish.
Sprinkle broccoli, 1/2 cup cheese, the chicken and onion in the prepared pie dish.
In a small mixing bowl, stir together the baking mix, milk, salt, pepper and eggs until blended. Pour evenly into pie plate.
Bake for 30 to 35 minutes, or until a knife inserted near the center comes out clean.
Sprinkle remaining 1/2 cup cheese over the top and return to oven for 1 to 2 minutes more, or until the cheese is melted.
Remove from the oven and let stand for 5 minutes before cutting into 6 equal slices.
