I’ve been craving a Bacon, Lettuce and Tomato Sandwich, but really didn’t want all that bread. That’s when I came up with this idea for BLT-inspired avocado toast. I swapped fresh sprouts for the lettuce and had this tasty lunch ready in minutes.

One of the key ingredients of this BLT Avocado Toast is hard boiled eggs, something I like to keep ready and waiting in the fridge. Quickly turn out perfectly cooked, easy-to-peel hardboiled eggs each and every time by cooking them in your InstantPot.

- Ripe avocado, mashed (with salt and pepper, or your favorite spice) – a creamy, healthy alternative to mayo.

- Cherry tomatoes, chopped – add a burst of juice sweetness to this delicious open-faced sandwich. Colorful grape tomatoes are another tasty option.
- Bacon, crumbled – I often meal prep bacon in my air-fryer. Real bacon pieces from the grocery store are another convenient alternative.
- Fresh sprouts – I used alfalfa and clover sprouts but opt for the sprouts you like best or skip them altogether.
- Everything Bagel seasoning (affiliate link) (if desired) – a popular blend of spices that captures the signature flavors of an “everything” bagel. The blend usually includes sesame seeds, poppy seeds, dried garlic, dried onion, and salt. I like the Trader Joes brand but there are lots of options to choose from.
How to Make Bacon, Lettuce and Tomato Avocado Toast
Step 1: Gather and prepare all ingredients.

Step 2: In a small bowl (affiliate link), mash the avocado with a fork. Feel free to add any favorite spices (I used salt and pepper).

Step 3: Toast bread to desired level of doneness.
Step 4: Smear 1/2 the mashed avocado over one slice of toast. Repeat with the second slice.

Step 5: Place 1/2 sliced hard boiled egg over avocado on each toast.

Step 6: Spoon tomatoes and bacon pieces over toast.

Step 7: Sprinkle Everything Bagel seasoning (affiliate link) over toast (if using).

Step 8: Top each toast with 1/2 fresh sprouts.

- Substitute your favorite thin sliced or low calorie bread. I really like Dave’s Killer Bread – 21 Whole Grains, Good Seed, Whole Wheat or Sprouted Whole Grains.
- While mashing the avocado, sprinkle in your favorite spices or keep it simple with salt and pepper.
- I didn’t want to use lettuce on this toast, so I took the liberty of swapping out the lettuce with fresh sprouts. If you prefer lettuce, go for it!

Absolutely fantastic. my daughter (13yo) made this for the family tonight. Bonus arrived home to a house filled with the smell of toast and turkey bacon. Since the covid lockdown in 2020, each of our kids is assigned to make a meal for the whole family once a week. this has turned out to be an amazing experience. This recipe is great for those hot summer days when you do not want to put the oven on!
