Ingredients 

  • 3 slices center cut bacon
  • 2 slices light whole-grain bread
  • 1 tablespoon reduced-fat mayonnaise
  • 1/4 cup lettuce of your choice
  • 2 thick slices tomato
  • Salt and pepper to taste

Instructions 

  • Heat a large nonstick skillet (affiliate link) over medium heat.
  • Cook the bacon, turning occasionally, until crisp, about 5 minutes. Remove to paper towels and let drain.
  • Toast your bread lightly. Spread one side of each slice with mayonnaise. Top with lettuce, tomato and bacon.
  • Season with salt and pepper to taste. Top with second slice of toasted bread and cut in half.

Here are some ideas for how to make a lighter healthier bacon lettuce and tomato sandwich that won’t blow your calorie and points budget:
  • Bread: Since I’m in maintenance mode, I use regular whole-grain bread, which costs 4 Points. If you want to save a point or two opt for light bread or light sandwich buns.
  • Bacon: Center-cut pork bacon and turkey bacon are the leanest options.
  • Lettuce: Iceberg or romaine provide the best crunch, but use whatever you like best and/or have on hand. Even spinach can work.
  • Tomato:  A large beefsteak tomato is definitely the best option. Thick slices of tomato seem to be less likely to slip and slide.
  • Mayo: Use reduced-fat mayonnaise or change things up with mashed avocado.

  1. love this recipe! I have a question, though if you can answer. When topping each one-side of toast with the mayo, are you using 1 tablespoon on each piece of bread? or, are you only using 1 tablespoon of mayo and using it for both pieces?

      The ingredients list shows 1 tablespoon of mayo so I use it divided between both pieces of toast. Hope this helps. ~Martha
