WW Recipe of the Day: Microwave Mug French Toast
French toast doesn't have to just be for special occasions or for when you're feeding a crowd. Now you can enjoy it anytime the craving strikes with this simple version. All you need is a mug and a microwave (affiliate link)!

How to Make French Toast Mug
Step 1: Gather and prepare all ingredients.

Step 2: Whisk together the low calorie sweetener, salt, ground cinnamon, egg, milk and vanilla in the mug until thoroughly mixed. Add the bread cubes and push them down into the liquid. Let mug stand for at least 15 minutes, allowing the liquid to be absorbed by the bread. (Press bread down as necessary to ensure equal absorption.)
After resting at least 15 minutes, ready to cook the French toast
Step 3: Microwave on High Power to 1-½ minutes, then check for firmness and remaining liquid. Cook in additional 30 second increments on High until all liquid has been absorbed and bread is firm.
Step 4: French toast will be extremely hot, so you may want to let it rest for a minute or two after cooking.
Step 5: Enjoy directly from the mug, or removed to a plate, and top with your favorite toppings, if desired.

Save time in the morning by mixing this up ahead. Simply combine the sweetener, salt, cinnamon, egg, milk and vanilla in a mug and whisk until thoroughly mixed. Add the bread cubes, pushing them down into the liquid and then cover and refrigerate until ready to cook.
For a sweeter version, add 1 tablespoon of raisins, dried cranberries (or your favorite chopped dried fruit), or mini chocolate chops to the bread before cooking.
What to Serve with this Quick & Easy French Toast?
This French toast can enjoyed directly from the mug or you can remove it to a small plate. Top with your favorite toppings: Butter, maple syrup, honey, fresh fruit (strawberries, blueberries, raspberries, etc.), dollop of yogurt, powdered sugar, etc.
Remember to adjust WW Points accordingly.

- ⅛ teaspoon Kosher salt
- ⅛ teaspoon cinnamon
- 1 egg
- ½ cup unsweetened almond milk
- ¼ teaspoon vanilla
- 1-¼ cups whole grain bread cubes (preferably stale) (I used Dave's Killer Bread Thin-Sliced 21 whole grains bread)
Optional toppings:
