This Kodiak Pancake Coffee Cake Mug is one of my favorite quick and easy WW-friendly breakfasts, especially when I want something warm, satisfying, and a little sweet. It’s moister and denser than a traditional coffee cake, but still light and flavorful — perfect for busy mornings.

The recipe was shared with me by Lauren, a fellow Weight Watcher and longtime reader. I’ve made it many times since, always using Kodiak Cakes Protein Pancake Mix for a high-protein mug cake that keeps me full for hours. If you prefer, you can also make it with Bisquick or your whatever complete pancake mix you happen to have on hand.

Ingredients You’ll Need

  • Kodiak Cakes Buttermilk Power Cakes Mix – Adds a hearty texture and protein boost. You can substitute Bisquick or another complete pancake mix if that’s what you have on hand. . If you’re looking for more ways to use Bisquick, check out my collection of WW-friendly Bisquick recipes.
  • Plain nonfat Greek yogurt – Helps keep the cake moist. You can also swap in mashed banana for part of the yogurt if you like.
  • Egg – For structure and richness.
  • Sweetener of choice – I usually use Truvia (affiliate link), but any zero-calorie or sugar substitute will work.
  • Vanilla extract – Adds flavor depth.
  • Fruit – Blueberries are my go-to, but raspberries, chopped peaches, shredded apple, or strawberries are all great.

How to Make a Kodiak Pancake Mug Cake (Step-by-Step)

Enjoy a light delicious fruit filled pancake coffee cake in minutes with a mug, microwave and few basic ingredients…

Step 1: Gather Your Ingredients.

Kodiak cakes mix, Truvia baking blend, blueberries, yogurt, egg and spices.

Step 2: Mix It All Together

Stir together your ingredients until well blended. Fold in the fruit last.

Step 3: Microwave Until Set

Transfer the mixture to a microwave-safe mug (if you didn’t mix it in the mug already). Microwave on high for 1½ to 2½ minutes, depending on your microwave’s strength. It’s done when the top is set and springs back lightly to the touch.

Let cool for 1–2 minutes before enjoying!

Recipe Tips and Variations

Make it sweeter: If you like a sweeter mug cake, feel free to add a touch more sweetener or top it with a drizzle of light syrup.

Swap in mashed banana: Sometimes I replace 1/3 of the yogurt with 2–3 tablespoons mashed ripe banana for natural sweetness and a slightly different texture.

Use different fruit: Fresh or frozen berries, diced peaches, or grated apple all work well. Just be sure to drain any excess liquid.

Kodiak Pancake Coffee Cake Mug

Though moister and denser than traditional coffee cake, this pancake coffee cake has become a personal favorite of mine since Lauren shared it with me a while ago. I sometimes substitute 1/2 mashed banana for 1/3 cup of the yogurt. I love that it makes a generous single-serving.

Ingredients 

  • 1/3 cup pancake mix (I used Kodiak Cakes Mix (affiliate link))
  • 1 large egg
  • 2/3 cup plain nonfat Greek yogurt
  • 1/8 teaspoon Stevia (or sweetener of choice to taste – I used Truvia (affiliate link))
  • 1/2 teaspoon vanilla
  • 1/2 cup fresh fruit (I used blueberries)
  • pinch baking spice, cardamom, or cinnamon (if desired)

Instructions 

  • Mix all ingredients well and place in a large microwave safe mug that you have coated with nonstick spray.
  • Microwave on high until set, about 4 minutes. (Times will vary depending on your microwave.)
  • Enjoy warm or at room temperature.

The calories and WW Points of this recipe may vary depending on the kind of pancake mix you use. I have made this with Kodiak Protein Pancake Mix and BisQuick Heart Smart brands with good success.
Though the recipe calls for stevia, you can substitute your sweetener of choice. I opted for Truvia.
I also added a little bit of sweet baking spice.
I used blueberries to make my pancake coffee cake, but feel free to substitute whatever fruit you like and have on hand. Chopped strawberries, raspberries, chopped peaches or pears, crushed or chopped pineapple, or shredded apple would all be delicious.

    1. Hi Nancy, I’m not sure but believe it was about 12 ounces. You want a large mug because it puffs up quite a bit while cooking in the microwave. ~Martha
