1-1/4cupswhole grain bread cubes (preferably stale) (I used Dave's Killer Bread Thin-Sliced 21 whole grains bread)
Optional toppings:
Butter, maple syrup, honey, fresh fruit (strawberries, blueberries, raspberries, etc.), dollop of yogurt, powdered sugar, etc.
Instructions
Whisk together the low calorie sweetener, salt, ground cinnamon, egg, milk and vanilla in the mug until thoroughly mixed. Add the bread cubes and push them down into the liquid. Let mug stand for at least 15 minutes, allowing the liquid to be absorbed by the bread. (Press bread down as necessary to ensure equal absorption.)
Microwave on High Power for 1-1/2 minutes, then check for firmness and remaining liquid. Cook in additional 30 second increments on High until all liquid has been absorbed and bread is firm.
French toast will be extremely hot, so you may want to let it rest for a minute or two.
Enjoy directly from the mug, or removed to a plate, and top with your favorite toppings, if desired.
