CrockPot Artichoke Chicken was one of the first recipes I made during my Year of WW-Friendly Slow Cooking Challenge back in 2013, and it was an instant hit. Since then, it’s continued to be a favorite for its ease and flavor.

And now, I’ve simplified it even further with this 4-Ingredient Slow Cooker Goddess Chicken. Tender chicken, tangy artichokes, and savory sun-dried tomatoes all come together in a creamy tahini-lemon sauce from Annie’s Light Goddess Dressing (affiliate link). It’s ridiculously easy to make and just as delicious—maybe even more so than the original!

Ingredients

Boneless, Skinless Chicken Breasts – a lean protein option with a mild flavor. They cook beautifully in the slow cooker, becoming moist and tender. You can also use chicken thighs for richer flavor.

Canned Artichoke Hearts – tender and earthy, they add both flavor and fiber. Frozen or jarred marinated artichokes work too.

Sun-Dried Tomatoes – sweet, tangy, and full of umami. For fewer WW Points, use the kind not packed in oil.

Annie’s Light Goddess Dressing (affiliate link) – creamy, tangy, and lower in calories than the original. If you can’t find it, use light creamy Italian or Caesar, or make your own with tahini, lemon juice, garlic, and olive oil.

Instructions

Layer in the ingredients. Cover and Cook on Low for 4 to 6 hours.

Step 1: Load the CrockPot with chicken, sun dried tomatoes, drained artichoke hearts and drizzle on the dressing.

Step 2: Cook on Low until the chicken is tender, about 4 to 6 hours.

    Recipe Notes

    I started by turning an oven-based recipe into one for the slow cooker.

    Then to save a ton of calories and WW Points, I substituted Annie’s Light Goddess Dressing, which has 50% less fat and 50% less calories than their regular Goddess Dressing. (If you can’t find Annie’s Light Goddess where you live, you might try another brand or substitute a light creamy Italian or Caesar dressing you like.)

    Moist, tender and packed with flavor, everyone loved this easy dinner.

    Serving Suggestions

    To round out the meal, serve with low calorie mashed potatoes, couscous, white or brown rice or cauliflower rice (if you are watching your carbs) and your favorite green vegetable or a simple green salad.

    Ingredients 

    • 2 pounds boneless, skinless chicken breasts
    • 1 can (14-ounces) artichoke hearts, drained and chopped into 1/2-inch pieces, (I use the kind packed in brine or water, not oil)
    • 3 ounces julienne-cut sun dried tomatoes (or cut sun dried tomatoes into strips), (To keep the points low be sure to chose those packed dry in plastic bags not the jarred ones in oil.)
    • 1 cup Annie's Naturals Lite Goddess salad dressing (or use Light Creamy Italian or Caesar dressing)

    Instructions 

    • Ideal slow cooker size: 4-Quart.
    • Coat your slow cooker insert with non-stick spray.
    • Place chicken in the slow cooker and top with chopped artichoke hearts and sun-dried tomatoes.
    • Pour the salad dressing over the the top of the chicken and vegetables.
    • Cover and cook on LOW 4 to 6 hours, or until the chicken is tender.

Well it wasn’t a complete fail but it didn’t turn out great:) I browned the chicken and then I either didn’t deglaze sufficiently or there wasn’t enough liquid and I got the dreaded “burn” notice. So I had to open, deglaze, I added 1/2 cup of chicken broth and started over. It was good, and only a few burned pieces! Next time, I’ll add chicken broth to begin with and hopefully I can find the light dressing, I used regular as the store was out of the lite version. I liked the flover profile so I will try it again!!! THANK YOU!!!

      My husband and I both enjoyed this recipe. Very easy to make! I seasoned the chicken breasts with garlic and onion powder and pepper, just for a little added flavor, and added a can of drained mushrooms, as others suggested. I served it over brown rice, and added a sprinkle of parmesan cheese to the top of it! Very good!

    2. I’m going to try this recipe this weekend. Looks yummy. The reciep does not say whether the artichokes are packed in water, or the sun dried tomatoes are packed dry (vs in oil). I’m assuming water and no oil for both. Please clarify the recipe. Thanks.

      This was really easy to prepare but I was not too fond of it. My adult children thought it was good and we do have leftovers to try again. I’ll probably not make this again…MDH doesn’t eat red things in dishes. Poor guy he doesn’t know what he’s missing. But I do have soooo many new recipes from your website that I love. Thank you for all of these healthy recipes that are helping me loose weight.

      I used my pressure cooker and lite Italian dressing. It is one of our favorite dishes and so incredibly easy. I do slightly brown the chicken in the pressure cooker prior to cooking it with the ingredients. It only takes 15 minutes to cook.

      I’m an artichoke heart fan so I thoroughly enjoyed this. I couldn’t find the Annie’s Goddess dressing so used a light creamy Italian.

    7. I am a wipdow, so cooking for only me. I would cut this in half for me, build the other 3 servings be frozen? It sounds yummy!
