1can(14-ounces) artichoke hearts, drained and chopped into 1/2-inch pieces(I use the kind packed in brine or water, not oil)
3ouncesjulienne-cut sun dried tomatoes (or cut sun dried tomatoes into strips)(To keep the points low be sure to chose those packed dry in plastic bags not the jarred ones in oil.)
1cupAnnie's Naturals Lite Goddess salad dressing (or use Light Creamy Italian or Caesar dressing)
Instructions
Ideal slow cooker size: 4-Quart.
Coat your slow cooker insert with non-stick spray.
Place chicken in the slow cooker and top with chopped artichoke hearts and sun-dried tomatoes.
Pour the salad dressing over the the top of the chicken and vegetables.
Cover and cook on LOW 4 to 6 hours, or until the chicken is tender.
