CrockPot Artichoke Chicken was one of the first recipes I made during my Year of WW-Friendly Slow Cooking Challenge back in 2013, and it was an instant hit. Since then, it’s continued to be a favorite for its ease and flavor.

And now, I’ve simplified it even further with this 4-Ingredient Slow Cooker Goddess Chicken. Tender chicken, tangy artichokes, and savory sun-dried tomatoes all come together in a creamy tahini-lemon sauce from Annie’s Light Goddess Dressing (affiliate link). It’s ridiculously easy to make and just as delicious—maybe even more so than the original!

It’s no surprise that Stephanie, who tried this version, said:

“My whole family loves this! It’s the perfect easy weeknight meal.” ~ Stephanie

Sun Dried Tomatoes, Artichoke Hearts, Goddess Dressing, Boneless Skinless Chicken Thighs

Ingredients

Boneless, Skinless Chicken Breasts – a lean protein option with a mild flavor. They cook beautifully in the slow cooker, becoming moist and tender. You can also use chicken thighs for richer flavor.

Canned Artichoke Hearts – tender and earthy, they add both flavor and fiber. Frozen or jarred marinated artichokes work too.

Sun-Dried Tomatoes – sweet, tangy, and full of umami. For fewer WW Points, use the kind not packed in oil.

Annie’s Light Goddess Dressing (affiliate link) – creamy, tangy, and lower in calories than the original. If you can’t find it, use light creamy Italian or Caesar, or make your own with tahini, lemon juice, garlic, and olive oil.

Instructions

chicken, sun dried tomatoes, quartered artichoke hearts drizzled with dressing in the crock pot ready to cook
Layer in the ingredients. Cover and Cook on Low for 4 to 6 hours.

Step 1: Load the CrockPot with chicken, sun dried tomatoes, drained artichoke hearts and drizzle on the dressing.

Step 2: Cook on Low until the chicken is tender, about 4 to 6 hours.

    Recipe Notes

I started by turning an oven-based recipe into one for the slow cooker.

Then to save a ton of calories and WW Points, I substituted Annie’s Light Goddess Dressing, which has 50% less fat and 50% less calories than their regular Goddess Dressing. (If you can’t find Annie’s Light Goddess where you live, you might try another brand or substitute a light creamy Italian or Caesar dressing you like.)

Moist, tender and packed with flavor, everyone loved this easy dinner.

    Serving Suggestions

To round out the meal, serve with low calorie mashed potatoes, couscous, white or brown rice or cauliflower rice (if you are watching your carbs) and your favorite green vegetable or a simple green salad.

      Hi Martha,
So glad I found your site!!! Bought your “EBOOKs” (special price), and have tried many of your recipes already. There wasn’t one that we didn’t like.
I was anxious to try this one today, although we had to use regular dressing, (no low fat available). It was worth it! We really “LOVED”!!!! Hubby had 2 helpings, and asked me to put it on rotation……maybe every 2 weeks, yet!
Between you, and a few other sites, we are really enjoying having such wonderful tasting meals, and eating healthy!

Thank you for what you do!
      God Bless!
      Kathy

      1. Hi Kathy,

Thanks so much for taking the time to let me know that my ebooks and recipes are working for you and your family! It pleases me more than you know! – Martha

      1. Hi Devon, I haven’t tried it in the oven. I think if you placed it in a pan as directed and then covered the pan with foil and baked at 350 for 30 to 40 minutes or until the chicken is done it should work. The time will depend on the thickness of your chicken. Hope this helps. Let me know if you try it.

Hi Martha! Thanks again for the advice on cooking this recipe in the oven. It turned out great! We cooked for about 45 minutes because our chicken was on the thick side, but it turned out moist and tender and SO delicious! Thanks for helping to inspire my family’s weeknight meals! Cheers!

      2. Does this recipe require dry sun dried tomatoes or in oil? If I use dry do I need to presoak?

        1. Hi Sandi, either kind will work. With the long slow cooking time you don’t need to presoak the dry ones. ~Martha

    2. Ummm… I’m an idiot and made this with the regular goddess dressing. Any thoughts on how many WW points I should mark down? Ugh.

      1. Jody, You’re not an idiot! The lite dressing has about half the fat and calories of the regular and it really depends on how much of the sauce you ate. I’d probably just tack on a couple of points. Hope this helps. Just remember that this dish, even with the regular dressing is a lot better for you than a burger and fries, lol. Hope this helps. – Martha

    3. I bought sun dried tomatos dried ( I guess soak & slice, did not want in oil ( I’ll add more veggies maybe & can i use chicken thighs ( boneless skinless ) thanks

    4. I made this for my husband over the weekend. It is absolutely fabulous. I hid the leftovers so I could take them for lunches throughout the week. I did not change a thing! The flavor is amazing. I do like the idea of mushrooms and roasted peppers….next time. Thank you Martha for all you do. Your recipes are amazing.

    5. This looks so good! If I only use 1 lb of chicken should I use 1/2 cup of dressing or will the chicken dry out? I have found chicken breasts to be a little tricky for me in the slow cooker.
      Thanks!

      1. Hi Margaret. You are right. Chicken breasts can be tricky in the slow cooker. I think 1/2 cup of dressing with 1 pound of chicken should be fine but you may need less cooking time, depending on the size of your slow cooker. Hope this helps.

Why be rude, Beth? Simply ask for substitute suggestions? I felt embarrassed for you when I read your remarks.
