Fridays, I send out an email outlining my dinner plans for the upcoming week that are designed to work with Weight Watchers. I also publish them on my blog. This practice helps me stay on track with my meal choices and motivates me to make healthier food decisions.

My Approach to Meal Planning

Whenever I fall out of the meal-planning habit, I end up relying on takeout, restaurant meals, and too many random snacks. Before long, I feel sluggish and the pounds start to creep back.

I’ve found that simply having a rough plan for dinners makes healthy eating much easier. I’m far less tempted to order takeout when I already know what’s for dinner.

My approach is intentionally simple. Complicated meal plans overwhelm me, so I keep a Post-it note on the counter with a handful of dinners I want to make that week. That’s it.

Since I’m usually cooking for just the two of us—and our plans often change—I like to stay flexible. Most recipes leave us with leftovers, which become easy lunches or another dinner later in the week.

For me, meal planning only works when I keep it easy. A simple plan and a fridge stocked with a few healthy basics are all I need to set myself up for success.

What Do I Eat for Breakfast on WW?

Most days my breakfast is something quick like an english muffin with almond butter, avocado toast, cottage cheese with fruit, eggs, yogurt with fruit, oatmeal or a smoothie, depending on my mood and the season.

What Do I Eat for Lunch on Weight Watchers?

Lunch is usually leftovers or some combination of soup / sandwich / salad. This formula is a proven winner for me. I never fall into the temptation of takeout when I have a jar of soup, bowl of hard boiled eggs, container or leftovers and/or salad fixings staring back at me when I open the fridge!

This Week’s WW Dinner Suggestions with Points

This week features a combination of easy slow cooker, oven and stovetop dinners. Most will provide leftovers for additional quick and easy meals! I can’t tell you how much I love cooking once and eating twice 🙂

WW Slow Cooker Italian Beef and Lentil Soup
Easy, healthy and delicious this Weight Watchers Italian Beef and Lentil Slow Cooker Soup is one of my favorites. This is one of those dump and stir, one-pot slow cooker recipes. There’s no precooking required so it is great for busy days.

Impossible Chicken and Broccoli Pie
With just a little chopping, this dish can be prepped and ready for the oven in about 15 minutes. After about 35 minutes of baking, you’ll have dinner on the table in under an hour. You can also assemble it ahead of time and refrigerate it until you’re ready to bake. I’m planning to serve it alongside these delicious Parmesan Broiled Tomatoes.

Crispy tortillas—whether white or yellow corn—are layered with seasoned fat-free beans and topped with taco sauce, cheese, and tomatoes. This vegetarian option is perfect for Pizza Night, Meatless Mondays, or any day of the week.

You can also add a little leftover shredded or chopped lean chicken breast for an extra boost of protein. I like to serve a little size salad alongside. Sauteed zucchini and corn would also be yummy.

This cauliflower potato soup recipe proves that it’s possible to create a creamy and rich tasting potato soup that’s low in carbs, calories, fat and points. I didn’t really believe it was possible, but the smooth puree of cauliflower, potatoes and garlic gives the impression of being very rich, when, in reality, it is not.

I’m planning to serve this mixed green salad with goat cheese and dates alongside.
