Enjoy your favorite Mexican fast food option at home with this Skillet Mexican Pizza recipe made lighter. And the best part, it's ready in minutes with minimal prep and just a handful of everyday grocery store items.
Crispy tortillas (either white or yellow corn) are sandwiched with seasoned fat-free beans and the pizza is topped with taco sauce, cheese and tomatoes. This vegetarian option is perfect for either Pizza Night or Meatless Mondays (or anytime really), but you can also dress it up with a little leftover shredded (or chopped) lean chicken breast.
Either way, you end up with a deliciously filling homemade Mexican meal with a lot fewer calories than your typical restaurant version.
Homemade Skillet Mexican Pizza
According to Taco Bell, the ever popular Mexican Pizza will be returning as a permanent menu item in mid-September 2022. A longtime favorite staple on the Taco Bell menu, the pizza was pulled in 2020 in an attempt to streamline their offerings. It made a brief comeback in May of 2022, but sold out quickly.
The Taco Bell Mexican Pizza (without meat) has about 540 calories and 15 WW Points according to WW Recipe Builder (you must logged into your WW account to view this nutritional information).
From Taco Bell's nutritional chart, you can see that their Mexican Pizza weighs in at 540 calories, with 29 g fat and 49 g carbohydrates:

How to Make Mexican Pizza in a Skillet
Step 1: Gather and prepare all ingredients.

Step 2: Spray a large skillet (affiliate link) with non-stick cooking spray and heat over medium-high heat. Add both tortillas and cook just until they begin to turn golden brown, about 3 - 4 minutes.

Step 3: Remove one tortilla from the pan. Flip the tortilla in the skillet and spread with warmed refried beans and dust with taco seasoning.

Step 4: Place other tortilla on top of beans and layer with taco sauce, shredded cheese and tomato.

Step 5: Cover skillet and continue cooking for 1 - 2 minutes, or until cheese melts and pizza is warmed through. (Alternatively, remove pizza from skillet and place on a small microwave-safe plate and cook in microwave (affiliate link) for 30-45 seconds, or until cheese melts.)

Step 6: If desired, garnish with any favorite toppings: shredded lettuce, chopped cilantro, sliced green onions, avocado slices, sliced black olives, guacamole, light dollop of sour cream, queso fresco, crushed red pepper flakes, etc.

For a little protein boost, you can easily turn this into a Mexican Pizza with Chicken by adding a little chopped or shredded lean chicken breast.
For a nutritional protein boost, at shredded chicken to your pizza
Add the chicken to the second layer (in Step 4), on top of the taco sauce, and then continue by topping pizza with shredded cheese and tomatoes.

Continue with Step 5 and heat until pizza is hot and cheese is melted. Garnish with any additional toppings.

Additions and Substitutions
Other possible additions include, precooked ground meat including seasoned ground beef, ground turkey, ground chicken, ground pork or even leftover taco meat from Taco Tuesday. Or keep it vegetarian by substituting cooked veggie crumbles.

No taco sauce? Use a couple tablespoons of enchilada sauce instead.

No canned refried beans? Substitute by heating and mashing a can of black beans or make your own warm refried black beans.
No shredded Mexican cheese blend? Use reduced fat cheddar cheese, Monterey Jack, or your favorite shredded cheese (or blend).
