Made with crispy corn tortillas, fat-free refried beans, taco sauce, cheese, and fresh tomatoes, it’s just as satisfying as the fast-food favorite — but with a fraction of the calories and WW points.

Ready in minutes with everyday grocery store ingredients, this is one of my go-to recipes for Pizza Night or Meatless Mondays. You can keep it vegetarian or add a little leftover chicken breast for extra protein. Either way, it’s quick, easy, and delicious.

  • Corn tortillas – Either white or yellow corn tortillas will work. Look for thin, small ones (about 6-inch) so the pizza crisps up nicely. If you prefer, you can use whole-wheat tortillas for extra fiber.
  • Fat-free refried beans – These provide the hearty filling between the tortillas. If you don’t have canned refried beans, mash a can of drained black beans or pinto beans instead.
  • Taco seasoning – Adds that classic Mexican flavor. You can use a store-bought packet or make your own with chili powder, cumin, garlic powder, onion powder, oregano, and paprika.
  • Taco sauce – This takes the place of pizza sauce and gives that signature flavor. If you don’t have it, enchilada sauce or even salsa will work.
  • Shredded cheese – A reduced-fat Mexican blend works well, but you can substitute cheddar, Monterey Jack, or even mozzarella depending on what you have.
  • Tomatoes – Freshly diced tomatoes add brightness. Cherry tomatoes, Roma, or even canned diced tomatoes (well drained) will all work.
  • Optional toppings – Shredded lettuce, sliced black olives, chopped cilantro, sliced green onions, avocado slices, light sour cream or nonfat Greek yogurt, or a sprinkle of queso fresco.

For a protein boost, you can also add chopped or shredded cooked chicken breast, seasoned ground turkey, or veggie crumbles between the tortilla layers before topping with sauce and cheese.

How to Make Mexican Pizza in a Skillet

Step 1: Gather and prepare all ingredients.

Step 2: Prep the skillet. Lightly coat a large nonstick skillet (affiliate link) with cooking spray and set over medium-high heat. Add both corn tortillas to the skillet and cook until they start to turn golden, about 3 to 4 minutes.

Step 3: Bean layer. Remove one tortilla to a plate. Flip the tortilla left in the skillet. Spread with warmed fat-free refried beans and sprinkle with a little taco seasoning.

Step 4: Top and assemble. Place the second tortilla on top. Spread with taco sauce, then add shredded cheese and chopped tomato.

Step 5: Melt and heat through. Cover the skillet and cook 1 to 2 minutes, until the cheese melts and the pizza is hot.

Shortcut: move the assembled pizza to a microwave (affiliate link)-safe plate and heat 30 to 45 seconds to melt the cheese.

Step 6: Finish and serve. Add any favorite toppings and slice into wedges.

Recipe Notes & Tips

Warm the beans first so they spread easily and do not tear the tortilla.

  • Crispier tortillas: keep the skillet fairly dry and give each tortilla a little extra time during the first toasting step.
  • Sauce swaps: no taco sauce on hand? Use enchilada sauce or a thick salsa.
  • Seasoning options: store-bought taco seasoning is fine or mix chili powder, cumin, garlic powder, onion powder, oregano, paprika, salt, and pepper.
  • Protein boost: add a thin layer of chopped or shredded cooked chicken breast between the tortillas. Seasoned ground turkey or veggie crumbles work too.
  • Cheese choices: reduced-fat Mexican blend is great. Cheddar, Monterey Jack, or mozzarella also work.
  • Tomato tip: if using juicy tomatoes, drain briefly so the top stays crisp.
  • Make one or two: this is written for one personal pizza. Double everything to make two in batches.

Serving Suggestions

This personal Mexican pizza makes a satisfying meal on its own, but you can easily round it out with something light and fresh on the side. A simple green salad like my Orange Spinach Salad or Simple Arugula Salad with Sunflower Seeds and Parmesan makes the perfect complement.

Ingredients 

  • 2 6-inch corn tortillas
  • 1/3 cup fat-free refried beans, warmed
  • 1/4 teaspoon taco seasoning
  • 1-1/2 tablespoons taco sauce
  • 2 tablespoons reduced-fat shredded Mexican cheese blend
  • 1/4 cup chopped tomato

Optional Toppings

  • Shredded lettuce, chopped cilantro, avocado slices, sliced black olives, guacamole, light sour cream, etc.

Instructions 

  • Spray a large skillet (affiliate link) with non-stick cooking spray and heat over medium-high heat. Add both tortillas and cook just until they begin to turn golden brown, about 3 – 4 minutes.
  • Remove one tortilla from the pan. Flip the tortilla in the skillet and spread with warmed refried beans and dust with taco seasoning.
  • Place other tortilla on top of beans and layer with taco sauce, shredded cheese and tomato.
  • Cover skillet and continue cooking for 1 – 2 minutes, or until cheese melts and pizza is warmed through. (Alternatively, remove pizza from skillet and place on a small microwave (affiliate link)-safe plate and cook in microwave for 30-45 seconds, or until cheese melts.)

For a little protein boost, you can easily turn this into a Mexican Pizza with Chicken by adding a little chopped or shredded lean chicken breast.
Add the chicken to the second layer, on top of the taco sauce, and then continue by topping pizza with shredded cheese and tomatoes.
Continue with heating until pizza is hot and cheese is melted. Garnish with any additional toppings.
