WW Recipe of the Day - Slow Cooker Scalloped Potatoes and Ham
Every time I sit down to a plate of scalloped potatoes I ask myself why I don't make them more often.
They're an old classic that I've loved since I was a kid.
WW Friendly Slow Cooker Scalloped Ham and Potatoes
And the addition of a little ham and cheese turns them into a deliciously satisfying main dish.
This was the first time making slow cooker scalloped potatoes and ham.
I adapted the recipe slightly from Fix-It and Forget-It New Cookbook: 250 New Delicious Slow Cooker Recipes (affiliate link)
Low-Fat Slow Cooker Scalloped Potatoes and Ham Recipe Notes
It was the perfect way to use up what remained of the slow cooker ham I had tossed in the freezer.
I used reduced-fat cheddar cheese and Healthy Request cream of mushroom soup to lower the fat, calories and Weight Watchers Points a bit.
One of the keys to scalloped potatoes is slicing the potatoes really thin, which can be kind of a pain. I love using my little portable slicer (affiliate link), which makes the job sooo much easier!
Served with salad and steamed broccoli, these slow cooker scalloped potatoes and ham made us both smile.
And the leftovers disappeared without a problem too 🙂

Slow Cooker Scalloped Potatoes & Ham Recipe
Ingredients
- 8 cups peeled and thinly sliced potatoes (8 to 10 medium)
- Salt and pepper to taste
- 1 medium onion, sliced thin (about 1 cup)
- 1-½ cups cubed cooked ham
- 1 cup grated low-fat cheddar cheese
- 1 can (10-½ ounces) low-fat cream of mushroom soup (I used Campbell's Healthy Request)
- Paprika
Instructions
- Ideal slow cooker size: 4- to 5-Quart.
- Grease your slow cooker with nonstick cooking spray.
- Put half the sliced potatoes in the bottom of your slow cooker, spreading them out evenly. Sprinkle with salt and pepper to taste.
- Sprinkle evenly with half the onion, ham and cheese.
- Repeat the layers one more time (potatoes, salt and pepper, onion, ham, cheese).
- Pour the soup into a small bowl and stir it until it gets nice and creamy. Spread it over the top of the ingredients in the slow cooker.
- Cover and cook on LOW for 6 to 8 hours, or until the potatoes and onions are tender when pierced with a fork.
- Just before serving, sprinkle with a little paprika.

I just made this. With a food processor it was quick and easy! I can't wait for dinner! I'll let you know how it is. I figured the smart points to the best of my ability. It came to 8 Smart Points. ( I have to add a bit as I only had regular Cream of Mushroom soup on hand)

WOW! This was absolutely delicious!!!! My only suggestion is for anyone making this to take into consideration the salt in ham. I will use a bit less next time. My mistake, not the recipes. (It wasn't too overly salty, luckily!). I would highly recommend this recipe!!!!
This was perfectly done within the time it said too! You don't always know with crock pot cooking.

I made this for dinner tonight. My two goals when I get in the kitchen are to have super easy recipes and cook mainly healthy food. My husband's two goals are for there to be some kind of meat included and to taste good. This dish met all our goals!
I made it with cubed ham and used part skim mozzarella instead of low fat cheddar because that's all I had. I baked it in the oven instead of the crock pot as I didn't have time for the crock pot after I discovered the recipe. My husband has already put in an order for the leftovers with scrambled eggs tomorrow for breakfast. Thanks for the great recipe!

I made this for our evening meal Wed night-boy howdy was this tasty! MDH loved this recipe and I loved the ease of making it. I sliced the Yukon Gold potatoes with the skins still on (saved time and we love the skin) using my mandolin so all were the same thickness and it was quick. Half way through the cooking time I did stir the food in my slow cooker. We have enough left for another meal so leftovers are scheduled for Sat. night. Thanks for giving me these great recipes that MDH enjoys as much as I do and fit into my WW lifestyle!

I first made this recipe in May and want to tell you all about a slight change I made that turned out delicious for an already delicious recipe. Campbell's has a Healthy Request Cheddar Cheese condensed soup. I used that instead of the cream of mushroom for the topping spread on top of all the potatoes in the slow cooker. I must saw it was just as tasty as the precious 2 times I've made this recipe and I don't believe it changed the points. Looking forward to the leftovers tomorrow night!
