Today's recipe is for a Hawaiian inspired dish that combines cubes of sweet potatoes and ham with pineapple jam and pineapple chunks.
All I can say is YUM!

Skinny on Slow Cooker Ham and Sweet Potatoes
When I first presented this slow cooker ham and sweet potatoes dinner to Rod, he said it sounded strange.
Then I reminded him that ham is often served with a pineapple glaze and sweet potatoes are often a yummy accompaniment.
All I did was combine the ingredients into an easy one pot meal.
It was delicious.
Roasted brussels sprouts made a nice accompaniment.
After his initial skepticism, Rod had two servings!

Any tropical flavored jam would work well here. I used St. Dalfour Pineapple Mango Preserves (affiliate link).

Slow Cooked Ham & Sweet Potatoes Recipe Variations
no ham - cooked chicken or turkey sausage would work well as a substitute.
no pineapple jam - substitute with any jam/jelly/fruit puree you think would work. Orange marmalade, apple jelly, pepper jelly for a little kick. I also think applesauce would work with fewer calories/points.
no pineapple - a chopped apple or two would be nice

Would it be possible to do this in the oven?

Made this in the oven (350°) with pineapple preserves and 1/2 tsp. ginger and it was a hit!

This dish was so simple and yummy! The only thing I did differently was I added 2 tbsp of mustard to make it a little more like a glazed ham. Not sure if that effects the WW points, but it turned out delicious! Will definitely make again!

I found this by googling ham, green beans and sweet potatoes. I love pineapples and ham so this looks delicious. I'm still curious if people think ham, green beans and sweet potatoes would be any good though. Has anyone tried that? Thanks!

Why didn’t you use any water or any so it won’t burn on the bottom?
Martha McKinnon
Hi Ana, The vegetables created enough liquid so mine didn't burn. ~Martha
