WW Recipe of the Day: Low Point Slow Cooker Chicken Teriyaki with Pineapple

Here is a super easy recipe for slow cooker teriyaki chicken. With just 5 ingredients dinner doesn’t get much easier or more delicious.

WW Friendly Teriyaki Pineapple Chicken

It’s really not that hard to make teriyaki sauce from scratch, which is what I did for this Teriyaki Chicken stir-fry a while back.

But sometimes I prefer the ease of opening a bottle. The key is finding a high quality teriyaki sauce without a lot of additives and preservatives that you like. It will make a huge difference. I like both SoyVay and Kikkoman Takumi brands.

Recipe Notes

I like to add a little Minute Tapioca (affiliate link) to thicken the sauce of this chicken teriyaki. It comes in a red box that you will find on your grocer’s shelves near the boxed pudding and jello. You can always skip it and instead thicken your sauce at the end by mixing a couple of tablespoons of cornstarch with a little water to make a slurry. Stir into the crockpot and then let heat for 10 – 15 minutes until thickened.

Served over rice or cauliflower rice with an Asian vegetable blend on the side, this slow cooker teriyaki chicken was tender and flavorful. It is definitely a do-over.

Leftovers can be portioned out and frozen for future quick and easy meals.

Slow Cooker Teriyaki Chicken with Pineapple Recipe

An easy healthy and delicious dinner, this slow cooker teriyaki chicken with pineapple was a big hit at our house. Be sure to use a high quality teriyaki sauce for best results.

Ingredients 

  • 2-1/2 pounds boneless skinless chicken thighs (8 thighs, 5-ounces each)
  • 1 can (20 ounces) pineapple tidbits or chunks, drained
  • 3/4 cup teriyaki sauce (I like Soy-Vay and Kikkoman Takumi brands)
  • 1/4 cup chopped green onion (scallion)
  • 2 tablespoons minute tapioca (affiliate link) (for thickening)

Instructions 

  • Ideal Slow Cooker Size: 4-Quart.
  • Coat the slow cooker with nonstick cooking spray.
  • Place the chicken thighs in the slow cooker.
  • In a bowl, stir together the pineapple, teriyaki sauce, green onion and tapioca. Pour the mixture over the chicken.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, or until the chicken is fork tender.

    This is just like ordering out without all the social distancing concerns. Love you recommended using cauliflower rice. I’m trying to cut carbs where I can. The sauce is so flavorful it makes even cauliflower taste good!

    1. Hi Annmarie, I haven’t tried it with cornstarch but believe it doesn’t stand up to long heating so I think it is best used as a thickener at the end of cooking like when making gravy. Yes, boneless, skinless chicken thighs would work well. They actually are less likely to dry out in the slow cooker. Time will depend on size but I would guess 4 to 6 hours on low. Hope this helps. – Martha

  5. For a family of 4 how many chicken breasts would you use and cook for how long ? Can you just throw in the crock pot frozen? What would cooking time be? Thanks so much!     1. Hi Annemarie, The number of chicken breasts would really depend on how big they are. You can throw them in frozen but the extra moisture as they cook would dilute the sauce. In my crock pot chicken breasts are usually done in about 4 hours on low. Again time will depend on size of the chicken breasts and how hot/fast your particular slow cooker cooks.
