WW Recipe of the Day: Slow Cooker Chicken Teriyaki with Pineapple
Here's a super easy recipe for slow cooker teriyaki chicken. With just 5 ingredients dinner doesn't get much easier or more delicious.
WW Friendly Teriyaki Pineapple Chicken
It's really not that hard to make teriyaki sauce from scratch, which is what I did for this Teriyaki Chicken stir-fry a while back.
But sometimes I prefer the ease of opening a bottle.
The key is finding a high quality teriyaki sauce without a lot of additives and preservatives that you like.
It will make a huge difference. (I like both SoyVay and Kikkoman Takumi brands.)
Slow Cooker Teriyaki Chicken Recipe Notes
I like to add a little Minute Tapioca (affiliate link) to thicken the sauce of this chicken teriyaki. It comes in a red box that you'll find on your grocer's shelves near the pudding/jello. You can always skip it and instead thicken your sauce at the end by mixing a couple of tablespoons of cornstarch with a little water to make a slurry. Stir into the crockpot and then let heat for 10 - 15 minutes until thickened.
Served over rice or cauliflower rice with an Asian vegetable blend on the side, this slow cooker teriyaki chicken was tender and flavorful. It's definitely a do-over.
Leftovers can be portioned out and frozen for future quick and easy meals.

Why don't you list the sodium content?

This was a hit at my house but next time I will chicken breasts instead of thighs. My husband also requested more pineapple in recipe.
Annemarie
For a family of 4 how many chicken breasts would you use and cook for how long ? Can you just throw in the crock pot frozen? What would cooking time be? Thanks so much! Your recipes are the only ones I use! Making this recipe for a friend at work. I really enjoy your recipes very much! TIA. ANNEMARIE
Martha McKinnon
Hi Annemarie, The number of chicken breasts would really depend on how big they are. You can throw them in frozen but the extra moisture as they cook would dilute the sauce. In my crock pot chicken breasts are usually done in about 4 hours on low. Again time will depend on size of the chicken breasts and how hot/fast your particular slow cooker cooks. Hope this helps. - Martha
Annemarie
Thanks for the quick reply. A few more questions. Can I use corn starch instead of tapioca? How much? Would you add at the same time? Can I use boneless skinless thighs? How long would I cook? Thanks.
Martha McKinnon
Hi Annmarie, I haven't tried it with cornstarch but believe it doesn't stand up to long heating so I think it is best used as a thickener at the end of cooking like when making gravy. Yes, boneless, skinless chicken thighs would work well. They actually are less likely to dry out in the slow cooker. Time will depend on size but I would guess 4 to 6 hours on low. Hope this helps. - Martha
Annemarie
HI can I use corn starch instead of tapioca? If so how much? How long to cook boneless skinless thighs if substituting? Thanks
Annemarie
Thanks so much!
Annemarie
HI would you suggest cutting the breasts into chunks and then sauntering or just cut into chunks and throw in? TIA
Marge
Hi
Love the recipes but since I only cook for myself I was wondering if you could say if the meals are freezable in smaller portions.
Thanks
Marge

Hi Marge, yes this is a great idea. I'll plan to include this information in the future and as we update old recipes. Thanks for the suggestion. ~Martha

This is just like ordering out without all the social distancing concerns. Love you recommended using cauliflower rice. I'm trying to cut carbs where I can. The sauce is so flavorful it makes even cauliflower taste good!

So easy and so good! Love the set-and-forget nature of slow cooking.
Martha Underwood
This is delicious. It is a keeper. The only problem is that the sauce was a little to thin for my taste.
Martha McKinnon
Hi Martha, you can always thicken up the sauce by making making a cornstarch slurry of cornstarch and water and then drizzling it into the hot sauce and allowing it to cook for a few minutes, like you would for making a gravy. Hope this helps. ~Martha

Although I made it a tad different because I didn't have some of the ingredients I basically made it but without the tapioca. I used fresh pineapple and cornstarch for thickening. It was really very easy to make and tasted great. I'll definitely be keeping this recipe & making it again. I served it over Brown Basmati rice.
